Aunt Edith's Baked Pancake
This is a great version of a German pancake! I make it almost every weekend. It is delicious as is, but for a variation, I add 1 tsp vanilla and 1 tsp cinnamon. Fantastic!

Chicken Chimichangas
These are a family favorite! I have been making them for several years and they always turn out fantastic. I usually grill the chicken, which adds a nice smoky note to the background. I definately recommend this!

Chicken Jambalaya I
Fantastic! And easy! My husband has been asking me to make jambalaya since having it at a restaurant a few weeks ago. I was excited to find this version that did not include andouille.I sauteed the chicken in the skillet and then removed it and sauteed the veggies. I also added the seasoning with the veggies as they softened.It had a kick but was exactly as I would have expected of jambalaya. I will definately make this again!
