Homemade Black Bean Veggie Burgers
These burgers are excellent! Even my carnivore husband loved these. To make the burgers a little healthier, I put oatmeal in the food processor instead of using breadcrumbs. To keep the burgers from falling apart, I used two eggs and just over a cup of ground oatmeal. After mixing all of the ingredients together, I refrigerated the mixture for just over an hour. Everything held together perfectly! We used red pepper instead of green pepper, because we much prefer that flavor. These burgers were delicious, and we will make them again and again!
