Overnight Berry Coffee Cake

Have made this two times with great results. The last time I cut the white sugar in half, because this cake was just too sweet for my husband's taste. Happy to say that cutting back the sugar made this cake even better because the other flavors came through.

Curried Cashew, Pear, and Grape Salad

Everyone loved this salad. I used pistachio nuts because that is what I had on hand. Next time I may not add the bacon. I don't think it made that big of a difference in the taste, so why not make things easier. I'll be serving this one again for sure!

Japanese Broiled Mackerel

My father-in-law really enjoyed this...and he is a boiled fish and potatoes kind of guy! I didn't have the Japanese wine, so I just used red wine that we had on hand. Next time I will marinate overnight for more taste. I also thickened with a little cornstarch at the end and used it as a sauce with the fish. That was very popular with the family.Thanks!

Very nice change from our typical spaghetti dinner. I doubled the recipe and used two cans of crushed tomatoes. I also cut back to two garlic cloves and used less oil.

Vegetarian Tortilla Soup

YUM! I didn't have the frozen pepper/onion stir fry, so I just added an onion and the red pepper that I had on hand. It was delicious! The kids really liked this one and were so excited to actually eat CHIPS for dinner!

Plum Blueberry Upside Down Cake

I cut back on the white sugar and used a little over 1/2 a cup. I think a cake that is less sweet helps to bring out the taste of the fruit. I also substituted half of the flour with whole wheat flour. I also followed someone's suggested and mixed the blueberries among the plum slices. The guests loved this dessert, and with all of our plum trees, I will be sure to serve this again!

Thai Pineapple Chicken Curry

Wish I would have taken the time to read the other reviews first. I would have thickened the sauce as suggested, and I would have cut back on the curry paste (which I did anyway, but I would have done so even more). Otherwise, I think it is a good recipe and easy to make.

Thai Barbeque Marinade

I thought this was a very good sauce. I marinated mackerel (next time I will marinate it overnight for even more flavor)and grilled it in foil. I didn't have the rice wine, but read on the Net that apple juice could be substituted. I used the leftover marinade and made a sauce by thickening with a little corn starch. The sauce was very popular drizzled over the fish!

Super recipe! I cut the garlic in half and think that helped to bring out some of the other flavors (also because we have HUGE garlic cloves here in Norway!)I also wrapped it in foil and grilled it. A real keeper!:-)

Spicy Fish Soup

Very good recipe! I changed it up a bit because my husband doesn't like tomatoes in his soup, and I was in an "Indonesian" mood. So I omitted the tomatoes and instead of cumin, used fresh ginger, turmeric and fresh parsley. I also cut way back on the chili powder because of our 18 month old and omitted the green chile peppers.

Michael's Foccacia Bread

This is a wonderful recipe. Sometimes this bread can be a bit oily for my taste, so I skipped the drizzling of the oil on top. Also, I added sliced black olives along with the onion. Luckily, I had some fresh rosmary on hand, which really adds something special to the taste. This bread was popular with the whole family!
