The most delicious pulled pork ever! I too recommend, as others have so helpfully, the pork butt cut (cheaper and so perfect) and to cook longer if you can. I did 8 hours instead of 4, and it was so juicy and succulent! Also, finding the right sauce is key. Err on the sweet side. You can always add honey to make it sweeter. I like Cattleman's original with some added honey. Yum!

Wonderful! Sweating the eggplant is a must, and I did two separate layers in the casserole dish (sauce-eggplant-cheese, and repeat) but other than that, this recipe is just right. I served it over angelhair pasta for a hearty meal and lots of delicious leftovers.
