Black Bean Soft Tacos

Friday night is taco night and this was a wonderful surprise to my husband and small children. I always make the kids a small batch without the cumin, chili powder, and green chiles. I added ro-tel instead of plain tomatoes, and a few jalapeno rings, diced to ours. So scrumptious, we'll make again and again! A real keeper!

Todd's Famous Blueberry Pancakes

THE BEST pancakes I have ever made! My husband and children raised their eyebrows and asked for many, many more! Definately double the recipe when making...there can never be enough of these. I also didn't wait very long to start cooking them, perhaps just 15 minutes. I would give 10 stars if I could. Gourmet all the way. :)

Beezie's Black Bean Soup

Wonderful recipe! It is easily modified when cleaning out your refrigerator...be creative! I added some leftover mexi-corn, a red pepper, and forgot the rice, but this recipe is so tasty no matter what! I made extra and freezed it...it will be wonderful pureed into a sauce over cheese enchiladas. I plan to make again and again! Thanks for sharing!

Country Scalloped Potatoes

Excellent recipe! I modified mine a bit, though. I didn't have any cream of celery soup or gravy, so I used a can of cream of chicken soup, and made my own gravy. 1 1/4 c. cold water, 1/2 c. flour, and 3 chick. bouillion cubes. I arranged half of the potatoes in the bottom of a 9x13 pan, sprinkled 1/2 of the ham, and a few of the onions, and then topped with 1 c. cheese. I repeated with the remainder of the potatoes and other ingredients, then topped with another cup of cheese and carefully poured the milk, gravy, soup mixture over all of it. I covered and baked at 400 degrees for 30 min, then removed the foil and baked at 375 degrees for another 30 minutes. HUGE HIT!!!

It was a good recipe. It reminded me of a kicked up slow cooker meat/potatoes/carrots. Might add some cumin and a can of ro-tel next time to kick it up a notch.

Great recipe! I always add a package of brown gravy mix to the cold water before I cook it in the crock pot. Makes a wonderful gravy. My children love it over mashed potatoes!

Chocolate Chip Pumpkin Cookies

Awesome! I also added a 28 oz. can of pumpkin instead of 15 oz, and a little more spice (cinnamon, ginger). I made these for my preschooler and his class and they LOVED it! A definate keeper! Soft cookies...like muffin tops. :)

Cabbage and Rice

You can eat this dish just like it is and it's very good. I also modified it to eat as a casserole/main dish. I added 1# ground beef, 1 t. each oregano, garlic powder, and basil; 1 14 oz. can tomato sauce. Stir all together until hot, spoon into casserole dish, top with cheese, and bake 350 degrees for 20 minutes. My husband and chidren loved it.

Italian Meatballs

Good recipe. Easy to make. I browned the meatballs in a large pan on the stove and added fresh homemede marinara to it after they were browned and simmered until the meatballs were firm. I was trying to save time doing that and they were still very nice even though I did not cook all day like the traditional recipe. Thanks for sharing your recipe!

White Chili I

Very nice flavor and extremely easy to make. I have added this to my recipe box and will make again and again. I omit the cayenne and spoon out a little into a medium sized covered dish and set aside for my kids, then I add some of the cayene to the pot and cook for about 30 minutes. We all love it!

I modified the recipe a bit to our liking and also easier for me. I used pre-cooked al-dente brown rice, and also added the beef bouillon to the water as suggested in other reviews. I added 1 tablespoon of worcestershire sauce, 1/4 c. italian style bread crumbs to the mixture. The sauce was a can of Annie's Organic Tomato Bisque soup (yummy by itself!) and a cup of beef broth. I also cooked it on top of the stove instead of baked. I would have used ro-tel to kick it up a bit if I wasn't serving it to my children. :)

Delicious and easy. I have modified this recipe to make a low-cal/lowfat recipe by adding fat-free soup and also make the original version. My family and I find both versions to be delicious. My picky children love this recipe and it's one I make quite frequently. Five stars!

Chocolate Pumpkin Cake

I have made this several times and it is a huge hit! I have prepared the recipe as stated, and the "healthier" way as well, and find it to be just as tasty either way! I also add 2 t. pumpkin pie spice to bring the flavor of the pumpkin out. Five stars!!!

Cottage Cheese Spinach Chicken

I found this recipe to be rather bland. My husband who eats everything didn't eat the leftovers like he usually does. I would definately kich it up a little bit with some swiss cheese or some dijon mustard.
