Chicken Enchiladas II
This turned out pretty good, but would have been better if I had not added sour cream and salsa to the sauce. It was really too sweet and I will add more cayenne next time. As mentioned by another reviewer, I added cilantro, lime, pepper, salt, and chili powder, along with a liberal dash of fajita seasoning into the creamy chicken mixture. I would also spray the baking dish with PAM since the flour tortillas stuck to the bottom. The extra sauce was really yummy with rice! This is a keeper, but I'll do it up spicy next time!

Blueberry Crisp II
This was GREAT! The mayo is really an interesting ingredient but it crisps up better than butter. I used brown sugar instead of white, and tossed the blueberries with a bit of flour. I also mixed in 1 tsp of vanilla and 1 tsp of lemon extract in with the blueberries. This dish was eaten up very quickly!

Very Best Blueberry Cobbler!
This might very well be the best cobbler I've eaten in a long time. I doubled the blueberries, and I was a little worried that I didn't double the topping. But I used self-rising flour, so there was plenty of cake to soak up the yummy blueberry juice! I also used Splenda and my picky husband never knew the difference! Thanks for this recipe; it's a keeper!
