Tuscan Soup

I've made this twice now, and it has come out perfect both times. I really enjoy the smooth broth and the spicy sausage. I used poultry sausage both times and I am extremely pleased with the results.

Greek Pizza with Spinach, Feta and Olives

Really good tortilla soup! We loved this one, and have been eating it all week. I made a couple simple changes - only 2 cans of green chilies and added some crushed red pepper. I also added about 1/3 of a cup of lime juice. Right before serving when I added the avo and cheese, I also put in some fresh cilantro. The combination of flavors made this soup truly amazing.

Rosemary Ranch Chicken Kabobs

Very tasty! Easier to saute in pieces before skewering them. The marinade was awesome, but needed sugar.

Cognac Shrimp

I was very disappointed with this recipe, I had high hopes for it! I followed the recipe perfectly except that I could not find sun dried tomatoes so I used cherry tomatoes instead. The I also added some peppers for color and mushrooms for flavor. The dish just wasn't impressive, and I was over all disappointed. Not what I expected from an allrecipes recipe.

Salmon with Mango and Brie

This was awesome! I made it for my family who isn't too fond of salmon or brie (I'm in love with both), and now they can't get enough of either! It was perfect over rice with some greens on the side. I can't wait to make this again!

Blackened Tuna Steaks with Mango Salsa

This was delicious! I didn't have time to make the mango salsa, so we just bought some in a jar and it turned out perfect. I can't wait to try it with my own salsa when I make this again, though. The mix of spices for the tuna was great, I used a little less red pepper than the recipe called for and they still turned out really hot. Overall, a great recipe!
