Spicy Shrimp and Grits

Followed the recipe, except I didn't add any salt, and I sprinkled the shrimp mixture with some creole seasoning as it cooked. Served it separately, rather than as a casserole, and it was wonderful!

Tofu and Veggies in Peanut Sauce

Omigosh! The ony change I made was to omit the molasses and sub Chinese rice wine for the vinegar. Pre-browned the tofu, stir fried it with the veggies, and served on brown rice topped with a little of the peanut sauce. This will be a definite repeat!

Sausage Egg Casserole

Left out the mushrooms (by request) when I made this for my husband's office brunch. Followed the recipe, otherwise, to a T. It was perfect! Everyone loved it and several have requested the recipe. I usually make a strata for this bunch, but wanted tp try something different, and this will be my go-to from now on!

Mmm-Mmm Better Brownies

I have avoided making brownies because I never made "perfect ones"...until now. Doubled the recipe for a 9 x 13 pan, used the melted butter, baked for 30 minutes and cut the cooled brownies with a plastic knife. Ha! I got this!

Flavorful Beef Stir-Fry

Loved this! I was looking for a gluten-free, high protein, low-fat beef dish and this is it! Quick, cheap, and delicious! Doubled the sauce, and added 1/2 teaspoon ground ginger. Served over brown rice.....yum!

Tried 'n' True Peanut Butter Cookies

I made these this morning, but added a bag of peanut butter chips. Baked for 10 minutes and they were PERFECT. (And I am very picky.) Wonderful crisp edges, tender center. My new go-to peanut butter cooky recipe.

Chocolate Mint Cookies I

Made according to the recipe and baked for 8.5 minutes. Perfect! I have worked my way through the to 20 cookie recipes on this site and was wanting something different. My son wanted a mint-chocolate variety and I scored on my first try. Thanks Susan!

Molasses Sugar Cookies

I dipped these in colored sugar for Christmas, and they were quickly gobbled up. I made the dough and then refrigerated it for 2 days before I got around to baking them. Baked for 9 minutes for slightly chewy cookies. Will definitely add to the cookie rotation.

Tiramisu Layer Cake

A real hit at our holiday dinner party today. A little time-consuming, but well worth the effort...pretty presentation. I "made" the marscarpone from the recipes posted by other reviewers, but otherwise followed the recipe. Used "heavy whipping cream" instead of heavy cream, as that was all I had available. Watched the beating time, though, and it turned out great. Will do again. for special occasions.

Pumpkin Chili Mexicana

It's still simmering and I already love it! My package of extra-lean ground turkey was just over a pound, but I used it all. I used light kidney beans and added a can of drained black beans, as well as a whole can of corn. Like another reviewer, I added some extra liquid, but I used low-sodium chicken stock. I also left out the salt. It smells wonderful and looks so pretty! Can't wait for supper!

Sloppy Joe Sandwiches

Doubled the recipe and followed it exactly. Am planning on serving it with home-made wheat hamburger buns, but if I keep tasting it as it simmers, there won't be any left for supper!
