Black Bean Hummus
My first attempt at Black Bean Hummus. VERY GOOD. Rinsed the beans and then added extra water and olive oil until it reached a constancy I liked. If you're not a garlic fan you might want to use roasted garlic in place of the raw. Personally I liked the garlic as suggested. I used krinos tahini for those curious. Sprinkled the finished hummus with paprika and olive oil. Great with a chili and lime flavored chips or homemade chili pita chips.

Grandma's Hash Browns
I was in a rush and decided not to refrigerate the potatoes over night. HUGE mistake. I must make a big difference. I waited maybe 40 minutes before using. They were cool but not cold. The potatoes were gummy and did not brown... well it was a mess! At that point I only used one potato. Not wanting to waste the potatoes, what I did was diced the rest of the potatoes and tossed them with a little oil and put them away in the fridge in a covered container. A day and in a half later, I pre-heated a cast iron pan on about med heat. I added Sunflower oil to the pan and NOT butter. Tossed the potatoes in the pan and left them alone. After they browned I added (diced small) vidalia onion, frozen bell pepper, and Salt and Pepper. Really, really good. I will try the shredded version again.

Cornbread Muffins II
I thought these were great. Half of a recipe makes 12 muffins. I did not use liners and just greased each muffin cup with butter to get the crunchy outside. I decreased the sugar to about 2 tablespoons for half a recipe. I also only used whole milk. Be very careful and do not over mix. I found a few lumps are ok.
