I must say this is the best salsa recipe I have ever made in my life. I had a friend once who made a salsa that was similar to this one, and I have been searching for 12 years to find a similar recipe. Well, here it is!!! The tomatoes are what make this recipe. Like another commenter stated; and I will too, “you must use Hunt Stewed Tomatoes” or else you might as well forget it. I followed the recipe exactly as stated. The only thing I did different was that I use a hand cranked food processor (which I bought at the swap meet) instead of a blender. Using a blender may blend the salsa too much making it runny and watery. I like the hand cranked food processor better because you can more easily control the chopping of the ingredients. There is virtually no way to over chop the ingredients with the hand cranked food processor. As well you can crank it backward to mix the ingredients, and then forward again to chop them. This helps in getting the perfect consistency. It is also a good idea to strain the juice from the tomatoes before putting them into the hand cranked food processor, if not it may come out to watery. There is enough water in the tomatoes and the green chilies to make it consistent enough, but not too watery. I drained the green chilies as well before adding them to the mix. Also for those who may not have access to or do not wish to use a real lime, I used a table spoon of lime juice instead of the juice from half of a lime.

Great Recipe!!! I used the mushrooms over a t-bone cooked medium rare. The flavor was robust, and the mushrooms were tender, but not soggy. I have been searching for a good mushroom sauté recipe for a long time, this is the one I will use from now on. WOW were those mushrooms great!!!!!
