Gourmet Mushroom Risotto
Excellent rendition of a classic Italian dish. The mushroom amount may seem like a lot, but trust me, you'll be glad you put that many in. Tasty! The only thing missing are the truffles. ;)

Baingan Bharta (Eggplant Curry)
The ingredients are pretty authentic, but some of the directions are incorrect. The 10 minutes on high heat will burn your food. I even cooked this at a lower temp than required, yet all I was left with was a dry, blackened mess after the 10 minutes. My stove does not "run hot," because every other recipe on this site has worked like a charm for me. If you want to make this, please reduce either your heat or cook time.

Blueberry Crumb Bars
An excellent treat for munching, and not overly sweet. Holds together rather well, so it is a good hand held food (though you may want a napkin to keep those crumbs, mmm). I left out the optional cinnamon and salt, and it still tastes great. Honestly, I believe that most any fruit could be substituted in, and the recipe would still be excellent.
