About this Cook
30 year old keeper-at-home, happily married, and homeschooling mother of 4, ages 6,5,2 and newborn. I'm a born-again Christian and I often cook for people in my church who are sick or recovering from surgery. I love to cook...anything...anytime...anywhere.
My favorite things to cook
I love to cook with my children. It is really a lot of fun. They, of course, love cupcakes and cookies.
My favorite family cooking traditions
Being a Florida family, we usually celebrate Christmas dinner with a seafood spread. Our typical spread would include fried fish (usually mullet, snapper or grouper) and jumbo shrimp, baked beans, coleslaw, hush puppies, and fries. It might not sound like much, but turkey and dressing once a year is plenty!
My cooking triumphs
Since I knew absolutely nothing about cooking when I got married in 2000. I would say that just learning how to cook was a triumph.
My cooking tragedies
When I first was learning to cook I had several cooking blunders, but this takes the cake. I had made some fresh-squeezed orange juice. I squeezed the whole bag and it was great! My next mission after that was to make some fresh-squeezed lemonade. So I went to the mega-mart and bought a big ole' sack of lemons and got to squeezing. I was worried because after squeezing ALL the lemons, I only had about 1 1/2 quarts of juice. So, I went to work the next day and asked for cooking advice: if a whole bag only gave me that little bit of juice, how many more lemons would I need for a gallon on lemonade?! They all had a good laugh at my expense and explained to me that lemon juice needed to be DILUTED for lemonade. Then there was the time I nearly burned the house down while trying to season my new cast iron skillets...

Slow Cooker Honey Garlic Chicken
I didn't have the pineapple, so I substituted homemade chicken stock for the reserved pineapple juice. I didn't have lite soy sauce and used the rest of the regular soy sauce I had, about 1/4 cup. I love garlic, so I used 6 cloves and halved them for easy removal later. Also used 1 tsp of ground ginger. Although I used so many substitutions, it was really good! I thickened with 4 tbsp cornstarch.

Grilled Salmon I
Didn't have time to marinade, so we brushed it on instead. Made a mess on the aluminum foil that was spread out over the grill grate, but still had a good taste, but not as strong as if it were marinaded. Great compliment to salmon's flavor.

Classic Tapioca Pudding
I was worried it was going to be runny, but it was perfect. It definitely needs a big of salt, but a pinch is plenty. I added 2 extra tablespoons of sugar and 1 tsp of vanilla. Fantastic tapioca pudding recipe.
