We have used basically the same recipe on Christmas morning for years! The only real difference is we drizzle one can of CREAM OF MUSHROOM soup mixed with a little milk to loosen and drizzle over the top before baking. We traditionally serve the brunch with curried fruit, cheese grits casserole and mimosa's...then go take a nap :)

Wonderful! Another use for Polenta is to pour it onto a pan while warm and let it set up in a thin sheet. When cool, slice up into small squares or strips for use in casseroles. Endless possibilities... A favorite is ground beef and taco seasoning, layered with cheese and sour cream/plain yogurt. Yummy!
