Freeda's Fabulous Fish
We made this for lunch today and it was instant hit with myself, 2 teens and spouse. I used the Best Steak Marinade in Existence recipe found here on allrecipes.com, changed it to 2 serving quanitity. I also used fresh organic tomatoes, which came out very sweet tasting in this dish. I did cut back the butter as suggested by others, and used a little more than a quarter cup. Overall, we found this to be great tasting, very quick and easy to fix, and a new favorite for our family.

Summer Corn Salad
This was a great recipe. I used 4 white corn on the cob, 2 small tomoato, 1 small onion, 1 Tbsp white vinegar, 1 Tbsp balsamic vinegar and a little more fresh basil than it called for. As someone else mentioned, do not skip the fresh basil, it is the best part of the flavor combination! Overall: Great garden colors and flavors; it is especially good on a hot summer night.

Haystacks I
I followed the recipe exactly as it is posted, as advised by Izzy&jujusmom, and they came out perfect. The peanut/coconut combo sure tastes great! Equally as good was that they took just minutes to mix, boil, mix and spoon - soooo simple. And within minutes, they were already setting up. An hour ago I was scrambling to decide last minute what dessert I was going to take to our 4th of July neighborhood party and now the Haystacks are done and I can relax. A keeper recipe for sure!
