Asian Chicken Salad

Reviewed: Oct. 25, 2009
This recipe "as is" was OK. The dressing was way to oily for our taste but we liked the basic concept and tried it a second time. We used only 1 tbs of oil and more rice vinegar. I doubled the dressing described with the oil adjustment and that made enough for 2 of us. Whenever we bbq chicken I cooked 2 extra pieces just for this salad which made next days dinner . I also used chopped cabbage and some lettuce. We added some mandrin oranges too. It turned out to be a great summer staple for us.

Honey Baked Chicken

Reviewed: Oct. 25, 2009
I made this with Boneless Chicken Breasts each cut into 4 equal pieces. I marinated the chicken in the mixture over night. I transferred it to a baking dish and cooked as directed. It was fabulous! I had never cooked with curry before and this was so good. If you use boneless chicken breasts you have to adjust the cooking time to about 30 minutes or it will be too dry.

Apple Pie - No sugar added :)

Reviewed: Oct. 25, 2009
This was the best apple pie!! We loved it. Traditional Apple pie has always seemed to sweet to me. This pie has a natural rich fruit taste that is very satisfying. The only change I will make is that I used 1 tbs of cinnimon which seemed like too much 2 tsp would be plenty and I used Golden Delious apples I am making it again this week, Yummy! Try it warm :0

Vanilla Crepes

Reviewed: Oct. 17, 2009
This was the first time I have ever tried making crepes and I was impressed. I will try to make them thinner next time by spreading the batter. We put fresh cut strawberries and warmed cottage cheese in the middle and dusted with some powdered sugar. My grand daughter filled hers with scrambled eggs and cheese.

Mandarin Chicken Pasta Salad

Reviewed: Aug. 16, 2009
My family thought this was really good. When I came home the next day all of the leftovers were gone. :( My mom put some of the leftovers on a freah bed of additional spinach and said it was even better the 2nd day. My husband ate his leftovers right out of the container. The only thing I didn't care for was chewing on the bits of ginger and I thought it didn't really need so much oil. Next time I am going to cut the oil in 1/2 and use powdered ginger. Thanks for great summer meal!

Italian Sausage and Peppers with Penne

Reviewed: Jul. 4, 2009
We thought this was fantastic. We were looking for a new way to serve Italian Sausage. The only change I made was to add some minced garlic, use Hot Italian sausage and drain some of the grease before cooking the vegetables. Even the leftovers were awesome. Thanks for a Great Recipe.

Blackberry Cobbler II

Reviewed: Mar. 14, 2009
This was very good. My husband loved it. I did add the extra filling as others reccomended but I think it would be better as is. I am all about the fruit and would add more berries. I would cut back on the sugar too. I made as indicated but transferred to a Pampered Chef stoneware dish to bake in the oven. Ice cream is a nice add to finish it off. :) I can't wait for next summers berries Yum!

Linguine with Chicken and Sauteed Vegetables

Reviewed: Mar. 14, 2009
This recipe was awesome. I had so much fun making it.I did leave out the lime and cilantro and added more soy sauce and seseme oil. Try adding any of your families favorite veggies. This has become a regular meal at our house and my friends beg me to make it when I visit.

Apple Crisp IV

Reviewed: Jan. 18, 2009
This is very good. I have cooked it several times now and the only adjustments I have tried have been 1/2 cup less flour, adding more cinnimon, lemon juice and vanilla. It all worked and there is never leftovers. :) If you try this recipe just adjust for your families tastes and you will be fine. Next time I am going to try adding boysenberries to give it a juicer finish. Thank you for a great Apple Crisp recipe!

Easy Grilled Chicken Teriyaki

Reviewed: Aug. 21, 2008
Awesome!! We loved this chicken. I made it exactly as instructed. My husband was so impressed he said I could BBQ for him anytime. He made a chicken sandwich on a french roll the next day with one of the leftover breasts and commented once again on how good it was. Thank you so much!

Garlic Green Beans

Reviewed: Aug. 10, 2008
This was a nice change to plain steamed Green Beans. I followed the recipe but used freah steamed Green beans and only 2 tbs of Olive oil. I also added 1 cup of fresh cut mushrooms. I used only crushed garlic. The next time I will reduce oil to 1 tbs because it still seemed a bit oily for our taste. The mushrooms turned out really well and made this a very nice side dish to the chicken and rice I served. I forgot to add the parmesan but it still turned out great. My husband was disapointed he didn't 2nd's and 3rd's. I promised to make it again this week. :)

Broccoli Beef Stir-Fry

Reviewed: Aug. 5, 2008
This was so good :) I followed everyone's advice and marinaded the sliced beef overnight in one portion of the sauce minus the cornstarch and sugar. I drained it before cooking and added 2 x times the sauce recipe as indicated since I increased the veggies. I added 1 tbs of Sesame oil. I left out the bell pepper and Pea pods then added a small sliced white onion to 3 cups of broccoli. My husband really liked it but thought it was missing a flavor you taste in a traditional asian restaurant. I would love to know what that is. Next time I will try it with the bell pepper, pea pods, bean sprouts and some zucchini.

Spaghetti Sauce III

Reviewed: Aug. 5, 2008
This was very good. I started with the Recipe as indicated and added 1 tsp freah cracked pepper, 1 tbs fresh garlic and 1 tsp of sugar. I also added 1 ground up link of mild italian sausage. After cooking the sausage I squeezed it with a paper towel to get all of the excess grease out before adding it to the sauce. I then added one small can of tomato sauce. The added sauce made it more attractive to pour over pasta and the taste was great. It was too thick without it. I put in one whole carrot cut in 3 pieces and let it simmer for an hour. (Remove carrot before serving) I served it over mini penne and it was so yummy. I may never eat RAGU again :) Thank you to all who added such wonderful advice in your ratings.

Chocolate Oat Snack Cake

Reviewed: Aug. 3, 2008
This cake was so tasty. I made it with the Choc chips mixed in as indicated but left them off of the top for a lower sugar option. The kitchen smelled so good while it baked. I didn't add nuts but did add a tiny sprinkle of powdered sugar to decorate. I will make this again maybe as muffins next time. I used regular oatmeal and it added a nice bulk to the very moist cake. Yum!

Parmesan Chicken

Reviewed: Aug. 3, 2008
This recipe was very good. It had a lot of flavor and the chicken was very moist. I do wish it had been crunchy on the outside. I think it was because of the amount of butter that is called for. Next time I will make it by dipping the chicken in egg instead and only drizzling a slight amount of butter/garlic on it before I bake it.

Honey Grilled Shrimp

Reviewed: Jul. 12, 2008
This recipe was very good. The taste was fantastic. I did think there was too much marinade. I will use less honey next time and watch the time on the BBQ. I couldn't tell if they were done so I over cooked them. :( They were still very good!

Tomato Pepper Steak

Reviewed: Jul. 12, 2008
This was so good :) I had lost a similar recipe and was looking for a replacement. My husband thought this was so much better than the other one I used. I did leave out the mushrooms since he doesn't care for them. I served this with Brown rice and the meal was very good. I took the leftovers for lunch the next day and everyone was following the smell from the micro to my office to see what it was and how they could make it. Thanks!
