a mum to 5 children, we are an evangelical, charismatic,christian family, 2 of our boys are autistic(aspergers) one has many other issues but is a happy little boy!!!!! i am doing a course on autism at the moment and hope to learn more, maybe so i can help others with what i've gone through.
My favorite things to cook
cookies for the kids( well and "big" kids like me too!!!) slow cooker recipes, indian, pasta, rice , puddings and cakes, cheesecakes, i will try anything and experiment.

cakes esp, coffee(flavoured not the ones most people think of in usa, not sure what you call a coffe flavour cake cos i cant find one on here!!!) marbled choc baked cheesecake.

a veggi moussaka from rosemary conolley book it was awful the topping was like something from outer space!!!

Buttermilk Chocolate Cake with Fudge Icing
i hav 2 say this is one of the moisest cakes ever!! i made it on a friay and iced on a wednsday and it was moist!!! i added orange extract as thats what i had in and it gave a lovely flavour of choc orange!! used fudge icing (melted butter, milk and icing sugar) and it was a winner, my son ate most, breakfast, lunch and supper, makes a good party cake to ice and keep, thanks!!!

Blonde Brownies
these are fab!! so gooey my nephew tried to whip them all!!! i must say when they were cooking i thought they had gone wrong as when i looked in the oven they were risen right up but after cooling they were great thanks!!

Pizza Dough I
this was soooo easy and as a busy mum of 5 children speed is essential!!!even the 2 autistic one ate it and usually kicks up a fuss with new things, thanks....my life just got a bit easier lol:)
