Schnitzel

Some of you noted that this is like chicken-fried steak. Chicken-fried steak is considered a Texas dish, BUT a lot of Germans emigrated to Texas. So chicken-fried steak is German Schnitzel, translated to American food products. Mystery solved!

Joe's Special Scramble

Hearty and tasty. Fresh spinach is the only way to go with this dish, however; use 1/2 pound (stems removed,or use the bagged stuff.) It cooks very quickly and gives a far better flavor. I used only half the onion, but added a touch more garlic, as it really complements the beef and spinach.

Green Pepper Pork Chops

Honest, simple, delicious. I omitted the browning sauce, opting instead to sear the chops well. For a fun twist, substitute green onion for the regular onion.

Smoky Mountain Chicken

This was tasty, a real hubby-pleaser! As many of you said, like some of the restaurant entrees we enjoy, but better. (Easier on the pocketbook, too.) I served this with rice, made extra garnish, and had rice with the extra garnish for a side dish.

Easiest, Amazing Guacamole

Quite good, and worked very well in taco salad. For eating with chips, however, I added a tiny bit of minced onion. Admittedly, I used salt and granulated garlic instead of garlic salt.

My husband and I enjoyed this recipe very much. We experimented and found that one can also make it with pork for a nice change, especially in Autumn.
