Hello darlins!

Today is a stormy, rainy, trees falling down kind of day here in the north country. Four storms have come through so far and some sun inbetween. Hubby is watching the Matrix with his eyes closed and snoring lol. his favorite way to watch tv!

Yesterday he made a pact with me to eat healtier and to lose some weight if we can. So I am on a mission of  getting more fruit and fiber into his diet. Which has lead me to this recipe and I am bakin it now.
Healthy Banana Cookies

First problem up is the dates. Well here in the north country dates are in a dusty corner of the village store and hard as a rock with petrified sugar over them lol so I am using raisins.  
I have 3 bananas of which I am not a fan but they are good for your blood pressure so have to eat at least one aday .. hey why not in a cookie?

I mashed them up the ole gal way in my cuisiart (shady smile)
added the oats, oil, raisins, some walnuts that needed to be used up , and the vanilla. now we are on break to let the mixure sit. the oats have to take in some of the moisture. oven is preheating .. and the cookie pan is ready.

into the oven they went for 20 min at 350.
they are now cooling on a rack and hubby just had to try one.. he popped the whole cookie in his mouth! oi you would think at his age he would be grown up by now lol  He likes them he said they are good and for me to try them. So i ate one and ya know they are good. Nice and chewie so in goes the next batch to cook.
I will have 32 cookies! I will put some in the cookie jar and some in the freezer for a rainy day.

Review:
My over all review is 4 stars.

They are a good snack and healthy.  You can build on the recipe as I did. Hubby ate 6 of them lol so much for the diet I put out 3 and he sneaks 3 more.. lol so i think it is safe to say kids would like them also. 

What i didnt like was the oil. Maybe next time applesauce. Which I am try to make sometime soon.

there are many.. but the one that means the most is from my daughter when she telephoned me to get my baked ziti recipe her favorite. :)
My cooking tragedies
lol oh my there have been so many over the decades..lol from childhood baking brownies by myself and using a 1/2cup of salt lol instead of flour lol they smelled good and my mom, with that proud look, served the first piece to my dads boss lol I shall never forget that look on that poor mans face lol
