West Coast Cod and Shrimp
I made this using half and half intsead of the heavy cream, and 1 tsp dried dill instead of fresh, and it was amazingly good. It tasted like something you would pay a lot for at a restaurant, yet it was simple to make at home. I will definitely be making this again, although I think I will add more mushrooms and shrimp (about double of each) next time.

Irish Tea Cake
Very good, moist and good crumb. However, it took more like 45-50 minutes to bake. Great dessert for my St. Patrick's day dinner. Served with fresh ice cream, and it was a hit!

Sweet Potato Pound Cake
I made this for my daughter's first birthday party, and it turned out great! I made it exactly as directed, using canned sweet potatoes and baking it in a bundt pan for 1 hour. Whoever said to bake it for longer than an hour must have had an oven that wasn't working right, an hour was plenty! It turned out great, and tasted fantastic, everyone loved it, even the birthday girl!
