Lemony Beef and Barley with Sugar Snap Peas

Really quick and tasty. Super fresh ingredients are the key here. Didn't have barley, so i used farro. Recipe easily substituted for personal preferences.

Mock Oatmeal

Pretty darn good for something so simple. I am struggling through a lo carb diet and have yet to discover a lot of options for breakfast. This really fits the bill. Reminds me of a hot cereal. I left out the sweetener and added flax. Thanks!

Thai Peanut Burgers

Little nervous about making this burger...with its strange-to-me ingredient list, but this was surprisingly delicious! Made just as stated minus the cayenne cause, frankly, i just forgot it on the counter. Will definitely make again. Try this for an offbeat twist to an old favorite. Thanks!

End of the Line Ham Casserole

as simple as this is..it is still amazing! I tire of making my husbands favorite standby-fried ham and potatoes-and decided to try this instead. I used green onions and just plain forgot the parm cheese..and it didnt matter. extremely flavorful. if pressed for prep time and ingredients, do yourself a favor and try this dish!

Rolled Flank Steak

If you are looking for an easy recipe with a beautiful presentation..look no further. This tastes amazing and looks like it took all day to make. It is super simple and very adaptable to what you have on hand or your own personal tastes. I stuffed mine with spinach, roasted red peppers, and aged provolone. My husband requested some capers next time, and there will SO be a next time. Great recipe! Thanks!

Holiday Guacamole

i like to try new and unique flavors..and this fit the bill. I was unsure of the recipe, so only made 1/2 batch. Don't make the same mistake! My daughter and I LOVED this! would definately make again..and again. Not only was it pretty, it appealed to even those unsure of guacamole. Good job!

Taco Beef and Pasta

This was easy and delicious. I used the chipotle taco mix and topped with a cilantro lime pesto from Whole Foods. A very quick dish.
