I'm probably the most petite person in my family, and not only do I eat the most, I make a mean flan. I also bring the most food at family gatherings :D
My cooking tragedies
The first time I tried making flan, I was using the 'pan within a pan' method and water flowed into the flan pan and completely ruined it! I'll admit it, I cried. Now I have pans with handles, which not only makes getting items out of the oven easier, it means the flan pan won't be floating in water! HA!

Pina Colada Rum Cake
D.E.L.I.C.I.O.U.S! This is soooo good! I couldn't find coconut pudding (the asian ones look more like gelatin than pudding to me), so I used vanilla pudding and 4 tsp of coconut extract. I also put in an extra tbsp of dark rum and coconut rum in the frosting. Super yummy. I've made this twice and both times have had rave remarks from my guests. Definitely a rum taste, but not too overpowering. Tastes just like it's namesake- a Pina Colada!

Fast and Easy Tofu Lo-Mein
Super easy and cheap to make (perfect for my single self). I only use the Oriental flavored ramen, because I think it tastes better (tried beef, spicy, and chicken). I can whip it out in 10 min (since I only fry the tofu), and all 3 are cooking at the same time: Noodles in a small pot, veggies in a bowl covered with seran wrap & in the microwave for about 3.5 min, and the tofu in a pan. I drain the noodles and toss everything in the pan with the tofu and flavor with the seasoning packet. Super easy and cheap (veggies cost about $1.80 and last for 3 meals, tofu $1 and last for 2, and ramen? really 6 for a buck at the 99cent store X-D). Minus one star because as good as it is, its sodium heavy.

The Best Banana Pudding
You have not glimpsed heaven until you try this pudding... *happy sigh* I brought this for Thanksgiving and everyone was singing my praises, lol. I made the recipe to a key, using reduced fat 'Nillas and low fat Cool Whip- at first it tasted off, but since I made it the night before, the next day it was perfect (I guess it just needed to mingle with the 'Nillas and bananas). I layered them in a glass bowl, and used about 5 bananas, but next time I will use 6-7 for extra banana goodness. 5 stars for a reason my friends!
