About this Cook
Although I've been cooking for a long time, I was a divorced mother of three working full time. So, if you are what you eat, I was cheap, fast and easy for many years. My kids are now mostly grown, I've remarried (to a man who can throw things together and it turns out delicious every time!) and I'm no longer working. Now I have the time to play in the kitchen and I'm having a ball! This website has helped me deceive my husband into believing I am a decent cook. Awesome!
My favorite things to cook
I love to bake, but I also love to fit into my clothes. So, I save the baking for birthdays and major holidays. Originally from the midwest, I moved to New Mexico and developed a real taste for the hot and spicy. I love to make Mexican food and crank up the heat!

Hawaiian Chicken Kabobs
Spectacular dish! I'm a little tired of chicken right now, (unless it's fried) so I tried this with chunks of pork tenderloin. Oh my! Melt-in-your mouth. I followed all of the recommendations of kajewski. I also used fresh pineapple instead of canned (heavenly), also skewered red and orange bell peppers, Vidalia onions, and I doubled the marinade mixture so I would have plenty to work with when adding the cornstarch. I marinaded my meat and vegetables in seperate containers. I served this over Asian Coconut Rice, submitted by silvrezs, added Sunkist Honey Roasted Almond Accents (a salad topper) per reviews. I had a little marinade/cornstarch mixture left over, so I drizzled that over everything. Rave reviews from my family and our dinner guest. I will make this again. Go ahead, try this with pork tenderloin. You will not be disappointed. Thanks for sharing dailyn2003!

Yia Yia's Tzatziki Sauce
Followed exactly as written (that almost never happens) DELICIOUS!!! Served it with a Gyroll from this site and it was perfect!

Grilled Greek-Style Zucchini
This was very, very good! I used 1/4 Vidalia onion and two cloves of garlic, minced. This was easy to make, took very little prep time and tasted delicious! I will be coming back to this one again and again. Thank you, Betty Washburn for this submission.
