Chickpea Curry

If it were possible, I'd give this recipe 4 1/2 stars because I thought the flavor was was great, but I added alot of extra ingredients. Baked sweet and Yukon gold potatoes, a can of diced tomatoes, green and yellow peppers and some red pepper flakes. It was delish, but not exactly the same recipe anymore...

Two Ingredient Pumpkin Cake

Easy, Easy, EASY! After reading some of the other reviews I worried that my cake would come out flat without eggs. I really didn't want to add egg because I didn't want the added fat. So, I followed the directions but added one cup of applesauce. It was PERFECT! Light, fluffy and delicious. Thanks!

Even my soup-hating husband loved this soup. I added a chopped jalepeno to the mix, but that's it. This recipe is great all on it's own.

Butter Bean Burgers

Hubby and I aren't vegetarians and we LOVED these! I didn't have a jalepeno on hand so I used 1/2 cup of salsa for heat. Substituted italian breadcrumbs for the saltines. Next time I'll add chopped veggies to the mix and serve caprese-style instead of as a sandwich. Super YUM!

Onion Soup Pork Chops

Hubby didn't like these, but I have no idea why! I thought they were tasty. I'd give it 4 stars for taste, but am rating it 5 stars because it was so darn easy!

Unbelievably Easy and Delicious Vegetarian Chili

The plus for this recipe: VERY easy to make. I literally dumped in the required incredients, turned the burner on low and walked away. Chili does not get any easier. Overall, the chili had a great smell but was way too salty. (For the record, my husband didn't mind it at all.) I followed the directions exactly, but if I made this recipe again, I would only put half a packet of ranch mix in.

Apple Butter Pork Loin

Hubby and I usually like sweet meat recipes, and this one did not disappoint. I changed it up a little bit by using boneless pork ribs (they were cheaper) and adding two tablespoons of soy sauce and a bit of garlic to the Apple Butter mixture. The apple butter coated the ribs well and had a great flavor. My only wish is that the apple juice would have penetrated the meat a little more. Still, though, VERY tasty!
