Beef or Chicken Enchiladas
This is the first time I ever made Enchiladas but I have leftover pulled beef in the fridge that I needed to use up. My friends loved it so much they took the leftovers home.

Fresh Salsa II
I cut this recipe in half and it work wonderfully and the perfect amount to go with supper. It was a real hit at my house.

Oatmeal Chocolate Chip Cookies I
My roommate and I love these cookies. But I started making them and realized that I didn't have baking soda, so apprehensively I substituted with baking powder and they turned out wonderfully. Very little and chewy.
