Chocolaty Pecan Pie Bars

Really easy to make (maybe easier than my favourite fudge brownie recipe), tastes like a pie! I used 4/5 of quantity of pecans suggested by recipe, and added milk chocolate chips. Great!

Honey Baked Chicken

Pretty good! I did use less butter than the reciple called for, and I also added some sesame seeds.I used boneless chicken breasts so altered the cooking time for that. The sauce was great for the baked chicken, and for dipping the veg!

Three-Cheese Pesto Pizza

I guess I based a pizza very loosely on this recipe? I used prepared crust (Napolitina), with spaghetti sauce and Italian herbs. I covered with parmesan, emmental, white cheddar and mozzarella. My toppings were sausage and mushroom, sauteed, then mixed with a drop of maple syrup. I put little dots of cream cheese across it. Great!

Chocolate Chip Pancakes

added a little extra milk, separated the egg whites and beat individually before adding to mixture. also added vanilla essence and cinnamon. *Update* I have recently tried making these pancakes, adding smooth peanut butter to the egg/milk. Irresistible!

Broccoli and Sausage Cavatelli

This had excellent flavour, and was easy to make. I sauted the sausage with a dash of chilli oil, and caramelised onions, and garlic paste; boiled penne pasta, adding frozen peas for the final 2 minutes. I added the pasta and peas to the pan, with sesame seeds and parmesan, and stirred to mix evenly. I served with parmesan and freshly grated black pepper.

Pecan French Toast

Very good, guests were impressed (and taking second helpings). I didn't add the sugar to the mixture, but sprinkled a little sugar after pouring the egg mixture over the bread. I turn the bread immediately, to help even coverage, and sprinkled the other side with sugar. I omitted the orange zest, and greased a pizza tray with butter to bake the toast.

Mrs Espy's Enchilada Sauce

It seemed a bit too thin in the saucepan (next time I will use less stock). It still had great flavour, and the enchiladas turned out very well. I'll definitely use this again!

Parmesan Sesame Chicken

I've made this before and it always goes down a treat! I add Italian herbs, and black pepper to the Parmesan/sesame/breadcrumbs mixture. If I use beaten egg for dipping, I drizzle a few drops of olive oil over the chicken breasts before cooking- it gives them a more golden colour. Alternatively, I've dipped the chicken in melted butter instead of a beaten egg-very tasty!

Ham Croquettes

Very easy, and so tasty! I didn't have green onion, and I don't add salt preparing food. I fell slightly short of cheddar so used a little mozzarella instead. I will certainly make these again
