Basil Chicken over Angel Hair

I used 6 cloves of garlic and ~1 cup of chopped onion. I added 2-3 tablespoons of crushed tomatoes for more body. I did end up having to add a pinch of salt and sugar to balance out all the flavours. The sauce was wonderfully light and fragrant - but the chicken was really bland. Next time, I will marinate the chicken breast in Italian dressing and grill it. I also thought it could use more fresh basil. A great base recipe and I appreciate how easy it was to modify ingredients to my taste without screwing up the recipe. Thank you :-)

Roasted Lemon Herb Chicken

It was ok - not flavourful enough for me. I think it would have been much better if marinated overnight (or at least for a few hours). Good basic recipe though! Thank you.

The fish cooks really quickly so be careful. Absolutely delicious flavour. It was too spicy for my boyfriend though. So, beware if you don't enjoy spices.

I don't understand what is special about this one - especially for all the different ingredients required. It needs some milk or something to help all the cheeses melt together. It will be a long time before I make it again.

Sweet, Sticky and Spicy Chicken

I added 3 chopped up scallions, extra garlic and ginger and topped with sesame seeds. The hot sauce of choice was Sriracha. I tossed the chicken in 1 tbsp of flour before browning it but I still needed to add a couple of teaspoons of arrow root powder to thicken the sauce after 10 minutes. It was very good but the dominant flavour was spicy (which I love) but next time I might use less hot sauce to let the sweetness come out. I would definitely make it again!

Couscous with Chickpeas and Carrots

This recipe is rather plain as is. I used more onion, garlic & parsley and it was still not that flavourful. I also added some cinnamon and cumin towards the end - that assisted somewhat. It was however a good supporting dish to the chicken which had a lot of fresh basil and sun dried tomatoes in the marinade. It helped balance out the overall flavour. I would make it again but with more modifications suggested by other reviewers.

Mediterranean Potato Salad

A perfect potato salad for the non mayo lovers! So light and perfect for the summer. I left out the feta (because I was preparing it for feta-haters) and it definitely lost something. Next time, I will put the feta on the side at least.

Savory Crab Stuffed Mushrooms

I used 8oz of canned lump crabmeat. I added 2 tbsp of minced garlic in the butter and also added a couple of teaspoons of Old Bay. Next time I will use even more garlic and maybe add some cayenne pepper. I might also use Indian spices or Thai spices next time to put an "ethnic" twist on these. However, it was a huge hit at the party! If you try this recipe, I definitely suggest trying to flavour it up more but it is an awesome base recipe.
