Enchilada Casserole III

I found this recipe while I was trying to figure out what to do with an extra pound and a half of ground turkey that I had after making tacos the night before (I accidentally defrosted the whole 3lb package!) I used a can of enchilada sauce instead of the powdered mix, and because I already cooked the ground meat with taco seasoning I just added the onion powder and garlic salt when I added the sauce. Definitely a keeper :o)

Delicious Black Bean Burritos

These were great and quick & easy to throw together. I followed the recipe except for the cilantro because I didn't have any on hand. We made 4 smaller ones because of the size wraps we had on hand. Next time I might add more cream cheese :o).

Chicken Tortellini Soup With Zucchini and Tomatoes

I had some tortellini in the freezer that I wanted to use when I found this recipe, but didn't get the urge to make it until my husband got sick. It was time consuming but still relatively easy to make and delicious!! I followed the recipe exactly but left out the celery because I forgot to pick some up at the market. I've added it to my recipe box and look forward to making it regularly :o)

Apple Crumb Pie

This tastes just like my grandmother's recipe, and we've been searching for it for years!!!! I used granny smith apples and sliced them nice and thin. My husband loved it, and he doesn't usually like apple pie :o)

Seven Layer Taco Dip

Chocolate Chip Cheese Ball

This recipe for company is great, and I will definitely make it again. It lacked a bit of flavor for my taste (I may add more vanilla next time...) but my guests loved it! Like others, I left out the nuts and rolled in chocolate chips. A big hit!

Banana Crumb Muffins

I had 3 very ripe bananas to use up today and stumbled on this recipe. These muffins are fantastic! I followed the recipe exactly and they were a big hit with the family and gone instantly. I usually use my mother-in-law's banana bread recipe which is a big hit, but the moistness of these muffins mixed with the crumb topping it even better. Thanks for a great recipe!!

Easy Pasta Fagioli

This soup is perfect for a cold winter night, and very easy to make! I took another's suggestion of adding 1 1/2 cups of water to the recipe to keep it from being too saucy, and it came perfect. I look forward to adding it to my recipe box!

These oatmeal cookies are outstanding! I followed the recipe to a T but pulled them a little early to make sure they'd stay soft and chewy ( I can't stand hard cookies!!). I'll definitely be adding these to my recipe book :o) and can't wait to bring them to work for Pot-Luck Friday!

Black Bean, Corn and Turkey Chili

I made this tonight for the first time and my husband and I loved it! I took others' suggestions and added a little corn starch to thicken it up a bit, and it was perfect. I served it with corn bread and look forward to having leftovers tomorrow for lunch! :o)

Mini Cheesecakes

My grandmother made this recipe for many major holidays, and I now carry on the tradition :o). I suggest aluminum cupcake liners because they are sturdier and add to the presentation. I use Comstock pie filling for the top and made 1/3 with cherry, 1/3 with blueberry, and left 1/3 plain for Christmas. They were a big hit! Also, it's much easier to drop in a whole Nilla Wafer on the bottom for the crust, and they come out just as good!
