Married in September 2008, I'm excited to start learning to cook for my current and future family. I'm a fourth grade special education teacher so with limited time to search for and try out recipes for hours on end, this website has truly been a godsend.

My grandma passed away this year at 102 years old and was a great cook. She left behind some dessert recipes that she was known for, and I'm slowly but surely getting the hang of them!

Oven Roasted Potatoes
I thought the spices might be too much, but these had a great kick to them. :o)

Enchilada Casserole III
I found this recipe while I was trying to figure out what to do with an extra pound and a half of ground turkey that I had after making tacos the night before (I accidentally defrosted the whole 3lb package!) I used a can of enchilada sauce instead of the powdered mix, and because I already cooked the ground meat with taco seasoning I just added the onion powder and garlic salt when I added the sauce. Definitely a keeper :o)

Delicious Black Bean Burritos
These were great and quick & easy to throw together. I followed the recipe except for the cilantro because I didn't have any on hand. We made 4 smaller ones because of the size wraps we had on hand. Next time I might add more cream cheese :o).
