Plum Tomatoes with Balsamic Vinaigrette
I live in South Florida where we have a fast food chain that has a side called balsamic tomatoes. I wanted to have some balsamic tomatoes to go with a steak dinner that I was going to make. This recipe came pretty close to the one that we get at the restaurant. I let the tomatoes marinate in the dressing for close to two hours, they really soaked up the dressing and they came out pretty tasty. The recipe was fairly simple, I used dry basil and doubled to liquid to make sure all the tomatoes were covered so they could all soak. This is definately a keeper.

Spinach Stuffed Chicken Breast
My husband used this recipe from one of the all recipe cookbooks. I love spinach dips and though this would give a similar taste. It was really delicious. My husband didn't alter the recipe and the taste of the filling was great as is. The pepperjack cheese gave the filling a nice kick while the sourcream made it tangy. I told him that this is one recipe that we could use for entertaining in the future. I'm sure any guest would be impressed. If I remember correctly, I think the outside part of the chicken got a little crispy, may try marinading it in the buttermilk or broth before cooking. You should give this a try, it will be worth it.

Balsamic and Rosemary Grilled Salmon
This is a great recipe. When I saw it in the newsletter I knew I had to put it in the recipe box. It was simple and worked well on an indoor electric grill. The salmon was very moist. I had a little mariande left over (used a dinner plate to marinate the fish and all of the marinade wouldn't fit) so I drizzled the leftover on top of the fish when it was plated. This was one of my favorite dishes using salmon...this is definately a keeper.
