Easy Garlic Broiled Chicken

Try this my way! Easy, tasty and pretty healthy! I halved the butter, only used 2 tbs low sodium soy sauce, FRESH parsley and thin boneless chicken breasts. Flipped them over after 10 minutes and threw a large handful of cherry tomatoes on top. Served over Spinach with tons o garlic. Came out delicious!

Baked Chicken Nuggets

I was looking for a healthy alternative to breaded chicken and I found it. I didnt really follow the recipe, but i did follow the reviwers! I followed one reviewers suggestion to use buttermilk instead of the butter to reduce the fat and another reviewers suggestion to use the cookie rack over the baking pan to crisp up both sides of the chicken and they both totally worked!! Turned out wonderful! I cut bigger pieces for chicken parm and used italian breadcrumbs for conveinence. Cooked it close to 30 minutes @ 400 and broiled them with a little mozz on top for 3 mins. Dont forget to spray with Pam and flip 3/4 through...served with whole wheat penne and leftover tomato sauce. Thank you reviewers!

Creamy Italian Dressing I

I did scale this down to make only 4 servings (which was really only 2) and i used miracle whip instead of mayo. other then that, i followed the recipe exactly. At first it tasted way to mayo-ee for me so i added another two tsp of red wine vinegar, some lemon juice, and a little bit of EVOO to thin it out. Very good! Thanks Cathy!

Classic She Crab Soup

This soup rocks! Tasted just like our favorite crab soup we eat here at the Jersey Shore!! I did alter the recipe due to what i had on hand..first sauteed about a 1/4 C each of yellow onion, celery, red pepper, and mushroom until they were soft then blended them together into a smooth consistency..followed rest of recipe but I cut in half.. subsituted clam juice mixed with water for the fish stock...and used skim milk and half and half instead to cut the calories. Added extra sherry, also lemon juice, and a bunch of old bay blackening seasoning to your taste..just a touch of cayenne pepper gave it the right spicyness! Omitted the egg because we were out, but i might try them next time. Thanks for this recipe! Now i can eat my favorite soup without the guilt!

Roasted Vegetables

AH-Mazing!! I changed the recipe up, but these veggies hands down, are incredible. I cut up potatoes (keep these separate because they take longer to cook), onions (keep these separate because they take the shortest time to cook), zucchini, and squash. Added a mixture of lemon juice, lemon pepper seasoning, garlic, dried parsley, balsamic, and olive oil to the veggies. Put in the potatoes alone first at 400degrees for 15minutes then added the zucchini and squash for the next 20 minutes and the onions for the last 20. 55 minutes total. Shake pan every ten minutes and tell your mouth to be prepared for greatness!! :) This will be a staple in my house. Thank you!!

Simple But Awesome Lemon Pepper Pork Chops

followed recipe exactly. it was very easy, definitely no frill cooking, but the meat came out very tough and not worth the extra calories i had to add with using the butter. Try the grilled lemon herb pork chops on here..still my favorite!

Eggplant Parmesan II

WOW! I will never fry eggplant again. I love eggplant parm, but i never thought it could taste this good baked! I didnt change the original recipe too much. I used 2 small firm eggplants. (When buying eggplant i find the smaller firm ones have the sweetest taste..so even though you think you're getting more for your money by buying a large one, the small ones taste SO MUCH better! and then theres no need to spend extra on the expensive small japanese eggplants) I cut quarter inch slices, salted and weighed the eggplant, then dipped in the whites and then a mixture of italian bread crumbs, panko, and parmesean. I wiped some EVOO on a large baking pan, made a single layer, and sprayed them with a little PAM. Crank the oven up to 425 and baked them 10 minutes on each side. They came out so crispy and delicious! Then i layered a little bit of sauce right over the eggplant and topped with skim Mozz and finished it off by broiling it for just a few minutes until the cheese is brown and beautiful. Good enough to serve to guests! and half the calories of frying!

Chicago-Style Pan Pizza

Yes! Yes! Yes! I have made pizza quite a few times, (never deep dish) but it has NEVER came out this good!!! I used a greased and floured 9 by 11 glass dish. Whole Wheat dough, turkey sausage, lots of onions and peppers, skim Mozz, and leftover sauce from the night before and baked for the full 35 minutes. So delicious! I was also suprised at how well the pieces held up, i expected to need a fork and knife, but no! The only tip i would give is to really take the time to pinch and mold the sides of the dough before baking. It will pay off on presentation and handling the individual pieces. Thanks for a great recipe!

Chimichurri Sauce

I dont think its right to drastically change recipes and then give them a low rating. In the food processer i added half an onion, lots o garlic and a seeded red pepper and then added chopped tomatoes to the finished sauce. It wasnt my taste, (little too potent), but my very picky boyfriend gobbled it up and shot-gunned all the leftovers! Any recipe that can make him do that means i'll be cooking this again! Thank you!

Garlic Chicken with Orzo Noodles

Orzo was a nice change to regular pasta or rice. Added a splash of sherry cooking wine, and a can of low sodium chicken broth half way through cooking chicken for more flavor and to keep the chicken moist. Turned out very nice! Comforting, but still pretty healthy winter meal. Thanks!

Grilled Lemon Herb Pork Chops

Try this recipe!!! Im always looking for healthy, easy meals during the week and this one was perfect! I used boneless centercuts, marinaded them overnight and used an indoor grill pan, (if you dont have one, you're missing out!) The only suggestion i would make is to not baste with too much of the marinade towards the end of cooking, it almost crossed the line of TOO lemony. Served with leftover risotto from the night before. Will definitely make again! Thanks!

Best Tuna Melt (New Jersey Diner Style)

I live in Jersey but i dont think this tastes like the diners' version. I love the idea of red wine vinegar, i'll definitely use that tip from now on, but WAY too much Parsley for me. It was overwhelming, and i love parsley! Im always looking for new ideas for bringing lunch to work. I made the tuna for lunch and brought wheat thins to go with it. (the melt would be soggy by the time i got to eat it)

Chicken Pot Pie IV

I made individual pot pies out of this recipe. The only thing i really changed was omitting the carrot and using crescent rolls on top instead of pie crust. It looked fantastic, but i was disapointed at the flavor, the gravy tasted like the crm of ckn straight out of the can. i thought it would take on some of the other flavors... next time i'll use much less, maybe half a can of soup and some chicken gravy. although, presentation in those individual cups is to die for and fun!

Green Bean Fries

didnt come out as crunchy as i would have liked, but boyfriend ate them who swears up and down he hates green beans! Try mixing ranch and a touch of wasabi sauce for an awesome dipping sauce!

Mini Cheesecakes

Sooo delicious!! im a terrible baker and these came out great! i did tweak a little due to what i had on hand. I crushed shortbread cookies, added sugar, cinnaminn and a little melted buter to form a crust. No need to bake this first, i put cheese mixture right on top and cooked for about 18 minutes. Came out OK after baking, but after sitting in the fridge for 24 hours..OMG!!! fabulous!!! i know its tough, but give it the time in the fridge..you wont regret it.

Awesome Slow Cooker Pot Roast

AMAZING! I did change a few things. I used a smaller slow cooker, and smaller roast trimmed of fat, seasoned with s&p and garlic powder. then browned on all sides. Used 1 can of soup refilled with half beef broth and half water. WHOLE packet of onion soup and about a a tbs of Worshester sauce. DO NOT FORGET THAT SAUCE!! made such a difference...yummy!

This was good, boyfriend loved it and the leftovers didnt even make it to the next day! the only thing i didnt like was how tangy the sauce was due to the vinegar...take the advice...cut the vinegar way down. otherwise, loved it! i served over herbed rice.

Spinach Stuffed Chicken Breast

this looked better then it tasted. I stuffed mine with cream cheese, sour cream, and parmesean. (since thats what i had on hand) and broccoli instead of spinach. the chicken was moist, but bland (and i heavily seasoned it) Next time, i'll season the cheese mix and add some kind of sauce to go on top of it and minus the bacon.
