Broccoli Coleslaw

I would easily give you 5 stars but, because I found it too oily I'm gonna give it a 4. Although I loved the taste and I'm not a great lover of sweet dressings, I thought it was wonderful. It was unfortunate that my whole family complained about "too greasy" next time I make it (and there will be a next time) I'll just reduce the amount of oil. and I'm gonna take it to my church's potluck because I know they'll love it as well. Thanks for posting this recipe

Mexican Rice II

This is the way I was taught to make my rice by my mom and grandmom but, throughout the years I've changed the way I make my rice--for example: When my kids were young they didn't like to see anything in the rice but rice (bits of onion, tomato etc) so, I used powder onion,cumin,garlic etc and as they grew I would add mixed veg.for added nutrition, and other times I omitted the tomato sause,cook rice as directed but at the end of the 20 min. of cooking I would add the cheese of my liking and let sit in the coveded pot for 5-10 min. and gently mix all together. The things you can add to this rice is endless. Just adjust the liquid accordingly. Sometines I add a few spoonfuls extra of liquid for a moister rice specially if adding a veggie that absorbs more liquid. Instead of tomato sauce you can add your favorite salsa for an added kick. Try different things just keep with the rice/liquid ratio 1 part rice 2 parts liquid. ENJOY

Hot Italian Giardiniera

Wonderful!!! I really enjoyed making these peppers. I ate them all by myself. I will make these over and over again. Thank you very much for posting. I did make a change to suit my taste, I doubled maybe tripled the amount of peppers. Thank you again. RG

Best Beef Dip Ever

I would give you more than a "5" rating if I could. This has got to be the best sandwich I have ever had. I am from Chicago and they are famous for their "Italian Beef Sandwiches" I have made it before but it requires slicing the roast very thin and that in itself makes me think twice about making it. But after I tried your recipe I believe I like it better. The meat shredded so easy it was like butter, I followed the other folks advice and after I made the beef I stored it in the fridge overnight and it was just wonderful the following day. My family all loved it and devoured it, they were even reserving some in their name for later (lol) I doubled the recipe because I wanted to freeze half for another time but it didn't work out that way. I couldn't stop my family from eating it. Next time I'll know better. This is definitely going on my permanent cook book of "tried and loved it meals" can't wait till I make it again. I love wonderful tasting food and easy to make. Thanks again for sharing this wonderful recipe.

Sweet and Sour Meatballs

I am very fond of this meal. It's easy and fun. My kids and my husband like it well. The only thing I do differently is that instead of making my own meatballs, I buy the Italian style meatballs. They are perfectly seasoned for this dish. I also like to make these meatballs for appetizers with toothpicks inserted on each one for easy pickup.

Chicken Kabobs Mexicana

This recipe was the best marinade for chicken and veggies kabob me and my family have ever had. I tripled the recipe and I separated the chicken and the veggies in it's own marinade so that they could cook at their own time, I wanted to have some leftovers but, we liked it so much that no-one could stop eating it. I make a somewhat similar marinade but I liked this one much,much better. My kids have even swore to hate zuchini but, not anymore!....It is a definite keeper!!! * Yumm Yumm * Thanks for the recipe
