Refried Beans Without the Refry

I used canned black beans, skipped the jalapeno, salt, and water. I used a submersable blender and hit a few times to thinken the beans. I cooked it for 6 minutes with the garlic, pepper, and cumin. I used this recipe with the Beef and Bean Chimichangas recipe from this site. Wonderful!

Chicken Pot Pie II

Fairly easy recipe. Some time savers are using frozen veggies and 1/2 can diced potatoes and leftover chicken or turkey. I don't use quite as much butter as what's called for. I prefer this recipe to the others that used canned soups. A+ in my book! Definately in the winter rotation!

Baja Grilled Chicken Wrap

Suprisingly very good! Definately needs the cabbage for the crunch factor. I was nervous about the ranch with chili powder. I made it as written with a couple of additions. I added in some cumin and cilantro though not very much because I didn't want to regret it later. I don't know if I noticed it or not, but it didn't detract from the taste. I will keep this in my rotation after making grilled chicken.

Teriyaki Pork Tenderloin

Suprisingly good. I did use alittle more brown sugar because I'm not that fond of the soy taste. I would make this again. I had zero time to marinate so I threw everything in a baking pan and cooked at 410 degrees. The top got a nice browning to it. I served with red mashed potatoes (w/ skins).

Chicken Noodle Casserole I

Not bad, but its missing something. I did add alittle time & garlic, but it needs more seasonings. I think next time I'll think down the sauce maybe 1/2 sour cream and 1/2 milk. I also put broccoli in to get some veggies in the mix. Otherwise, not a bad start. I think I might try to work with it alittle more.

Flatlander Chili

Great chili recipe. It's very similar to the oe I grew up eating. I skipped the green peppers & celery. I added diced tomatoes. I took anothers suggestion to puree a can of kidney beans since I don't like biting into beans. I also replaced the other can of beans with green beans- just because I usually do and I really like them. UPDATE: I brown the meat the night before and put everything in the crockpot. In the morning I take the crockpot out and put it in the warmer to let it cook all day. Wonderful! Have made it a few times since the original.

Pumpkin Whoopie Pies

Wonderful! I even made them slightly lower fat and less calories. I substuted 1/2 the oil with applesauce and used Splenda's brown sugar substitute in place of regular brown sugar (just remember to use just 1/2). I too used a simple cream cheese filling. I like the cookies even without the icing.

Blackberry Spinach Salad

I used some of my blackberries from my bush. The salad was pretty good especially paired with the sweet cherry tomatoes. I didn't especially like it without a dressing though. It wasn't bad, but it does need something else.

Marinated Turkey Tenderloins

Extremely good...I was very suprised! I used turkey cutlets which are about 1/4" thick so they take all of about 5 min on the grill. I thought with all the soy and teriyaki it would have an over powering soy taste, but it didn't. Granted, I only marinated about 20 min in my vacuum sealer container which is like quadruple the time. I also didn't put in the full amount of soy & teriyaki, but put alittle extra red wine vinegar. Well done on the recipe!

Oven Fried Chicken III

Very pleasantly suprised. Great flavor & moist. I did thin down the light mayo w/ milk. I used Panko breadcrumbs. You may want to add the spices on the meat after the breadcrumbs because it sinks to the bottom and until your about out of crumbs is where all the spices are left in the bag. So some of the chicken was alittle more spicy than others. I used the ranch dipping sauce for the tenders/ strips I made. Will make again.

Scalloped Corn

Perfect side dish for any get together. I typically do NOT drain the can corn. I think it makes for a more moist dish. I have also cut the butter and substituted apple sauce for as much as 2/3 of the amount of butter. You could probably cut the butter altogether if your really worried about calories.

Cream Cheese Penguins

Let me first say I hate olives. However, these are sooo darn cute I just couldn't resist taking them to a wine tasting/Christmas party. They were a great hit. I did most of them with regular cream cheese and then I added some ranch dressing the cream cheese. I heated the cheese up slightly to make piping it easier. Cutting the wedge out of the olive helps. I also cut another smaller wedge on the opposite side of the beak of the carrot not to split the olive (also cut in a small hole than just a slit). I cut up cubes of mozz. cheese to make it look like ice blocks. Super cute!

Brown Sugar and Spice Dry Ham Rub

Fantastic! We smoked a precooked ham for 3 hrs @230 degrees. I first smothered the ham in regular yellow mustard. Then I used this rub over the entire ham and massaged it in. At the 2 1/2 hr mark I mixed up honey & BBQ sauce and put it all over the ham. It looked and tasted awesome! The entire family loved it for Thanksgiving.

Delicious Ham and Potato Soup

LOVED IT! I did almost double the amount of potatoes and ham. I only slightly increased the other ingredients. A bay leaf was added based on another reviewer. I was slightly nervous because the butter/milk/flour mixtured didn't thicken very much before I put it into the other pan. As I left it on the stove it did thicken nicely. Definately will be making this again. Even dh who said he didn't like potato soup really liked this one.

Pineapple Cookies II

These were not good at all. I love pineapple cookies. Unfortunately, I clicked on this recipe by mistake and ended up making these. Will not use this recipe again. Definately needs more sugar and tastes too much shortening. For those thinking about making these definately cut back the shortening. Better yet, use another pineapple cookie recipe. Too bad I had no choice but to let dh take these to work...I'm ashamed.
