Scalloped Corn

Perfect side dish for any get together. I typically do NOT drain the can corn. I think it makes for a more moist dish. I have also cut the butter and substituted apple sauce for as much as 2/3 of the amount of butter. You could probably cut the butter altogether if your really worried about calories.

Cream Cheese Penguins

Let me first say I hate olives. However, these are sooo darn cute I just couldn't resist taking them to a wine tasting/Christmas party. They were a great hit. I did most of them with regular cream cheese and then I added some ranch dressing the cream cheese. I heated the cheese up slightly to make piping it easier. Cutting the wedge out of the olive helps. I also cut another smaller wedge on the opposite side of the beak of the carrot not to split the olive (also cut in a small hole than just a slit). I cut up cubes of mozz. cheese to make it look like ice blocks. Super cute!

Brown Sugar and Spice Dry Ham Rub

Fantastic! We smoked a precooked ham for 3 hrs @230 degrees. I first smothered the ham in regular yellow mustard. Then I used this rub over the entire ham and massaged it in. At the 2 1/2 hr mark I mixed up honey & BBQ sauce and put it all over the ham. It looked and tasted awesome! The entire family loved it for Thanksgiving.

Delicious Ham and Potato Soup

LOVED IT! I did almost double the amount of potatoes and ham. I only slightly increased the other ingredients. A bay leaf was added based on another reviewer. I was slightly nervous because the butter/milk/flour mixtured didn't thicken very much before I put it into the other pan. As I left it on the stove it did thicken nicely. Definately will be making this again. Even dh who said he didn't like potato soup really liked this one.

Pineapple Cookies II

These were not good at all. I love pineapple cookies. Unfortunately, I clicked on this recipe by mistake and ended up making these. Will not use this recipe again. Definately needs more sugar and tastes too much shortening. For those thinking about making these definately cut back the shortening. Better yet, use another pineapple cookie recipe. Too bad I had no choice but to let dh take these to work...I'm ashamed.

Grilled Tilapia with Mango Salsa

For someone who is learning to eat fish I have to say this was pretty good. My only complaint was the strong taste of the cilantro vs the delicate flavors of everything else. So when I do make this again I may either cut the cilantro in half of leave it out all together.

Chicken Souvlaki Gyro Style

I absolutely loved this!!! I didn't have the pita - so I made them. I didn't have the greek seasonings - so I had to look for a recipe from my favorite recipe site (allrecipes). I didn't have any balsamic vinaigrette, but I did have a a rasberry vinaigrette dressing that I used and added balsamic vinegar. I don't like olives and I didn't have pepperoncini or feta. No biggie because it still turned out fabulous! I had to laugh because as my husband was grilling the chicken he was commenting on how he didn't like the smell (blah, blah) and he didn't think he'd like it. As we were finishing up dinner he commented on how he really like it. He, he, he! We served it with grilled zucchini. Then had it for lunch the next day and I plopped the zucchini in the pita. This will definately become a bi-monthly recipe!

Blackberry Cobbler II

This is a wonderfully delicious and easy recipe. The dough part was the perfect texture, flavor, and sweetness. The berry mixture on the other hand was way to sweet. I wish I'd listened to another poster and start w/ half the amount of sugar and add if necessary. It really was way to sweet. It did receive rave reviews at the 4th of July party though. I used last year's blackberries from my bush that I'd froze. When I do make this again I will cut the sugar in half for the berry mixture (if making it for home I'll do splenda) and go from there. Definetely leave the amount of sugar in the dough. I also added cinnamon to both the berry & dough mixture along with nutmeg & vanilla extract to the dough. I don't own a cast-iron skillet so I transferred a very hot berry mixture (I didn't even bring it to a boil) to a pyrex dish.

Cheddar Beef Enchiladas

This is definately a staple recipe in our home. I'm not a fan of beans so I leave them out. Often times I'll cook up chicken (diced - partially frozen for easier dicing) add taco seasoning, water, and rice for easier cleanup. Then I'll finally add in 1/2 the cheese just before putting it into the tortilla. Great week night dinner. I always have leftovers which freeze great for workday lunches.

Pork Chops Stuffed with Smoked Gouda and Bacon

I really enjoyed this recipe. Different from the everyday norm. It was very flavorful and moist (11-12 min total). I did add diced gala apples to the cheese mixture. I do believe it will make a monthly rotation at my home. Thanks for the great recipe!

Chocolate Cherry Cupcakes

Great concept and execution. I was even able to make it a lighter version. I used the reduced sugar Devil's Food Cake Mix, substituted applesauce for the oil, and used the reduced sugar cream cheese frosting. DH loved it! My only suggestion is put the cherries more towards the middle to bottom of the cupcake because if they are towards the top...the top tends to collapse.

Stuffed Pork Chops III

WONDERFUL! Flavorful and not dry at all. I saved some time by using stovetop stuffing to stuff the chops. I also used an entire can @14oz of beef broth, put some stuffing in with the broth, and simmered it all for 30 min. uncovered. I had it with green beans and twice baked potatoes (I had frozen). I will definately put this in my normal rotation. I really enjoyed this meal!

Chicken Pot Pie I

Pretty good. I made the crust which came from another pot pie recipe from this site (doesn't affect this rating). I did add some thyme and garlic powder for extra flavor. I wish I'd added another can of soup mix because it turned out a little dry. It did have a nice flavor though. After making a couple changes I'd make this again.

Wonderful! I received many compliments. I was happy to use up the many blackberries from my bush. The cinnmon chips were great too. Hint: the flour works better than the whole wheat flour tortillas.

Pizza Dough II

Pretty good. I followed the recipe and made three crusts. I froze two and they still rose in the freezer. I'm still looking for a little more flavorful crust. Also I'd like something that doesn't rise up in the middle when I precook the crust for a few minutes on a pizza stone before adding the toppings.

Stuffed Chicken Breasts

Very good- flavorful and moist. I don't recommend using the breadcrumbs, as other suggested, if you plan on putting the cream of mushroom soup over them. I did thin out the soup with some milk.
