About this Cook
I am a stay at home mom; we have three kids- 5, 3, & 1. I love to read and play with the kids; and I have a passion for cooking. Christmas 2006 I ended up cooking Christmas dinner for my smaller family, and was completely terrified about it- but discovered a love for cooking. And I've never looked back. Since then I'm constantly looking for new recipes to try and finding recipes to make everything homemade. I love to bake bread and make pasta. My biggest problem is that there are not enough meals in a week to cook everything I want.
My favorite things to cook
I love to cook Italian and Mexican dishes. Any kind of baking!!! I have to limit my baking dishes to one a week or we are all going to start gaining too much weight!

We don't really have any.... our family is kind of at a point where we're creating new traditions.

Big Soft Ginger Cookies
Very good cookie, but I was disappointed that they didn't stay soft for more than a couple of hours. Maybe I baked them too long. But a quick zap in the microwave cured the problem.

Cookies 'n' Creme Fudge
Very good and EASY!! I used Holiday Oreos with red frosting in the middle and they are so pretty! I'm going to put them in Holiday gift baskets. And I'm excited to try the spring and Halloween oreos too.

Banana Crumb Muffins
Wonderful muffins. I'm eating a hot one out of the oven right now. I did use oil instead of melted butter and added a bit of cinnamon and nutmeg to the muffin. Very good! I'm thinking mini loaves for Holiday gifts!!??
