I live in Jacksonville, NC with my wonderful new husband Jon. He is an active duty Marine working on becoming a lawyer and I am a bored house wife for the time being. I love cooking and trying new things, I haven't met a food I'm afraid to attempt yet. Ingredients are scarce in our home since we just started out and are still acquiring that "always have on hand" stock. In the mean time I'm enjoying putting my own creative twist on recipes using what I have on hand. NC is surely nothing like Rhode Island but the food here is sooo much better.
My favorite things to cook
Anything from scratch. I don't like running out to buy anything for a recipe that requires I use something pre-made or frozen. I have a very limited budget and working from scratch is the easiest way. From this site I've fallen in love with a recipe for garlic mashed potatoes and my most recent triumph with the recipe for pie crusts which I used to make chicken pot pie.
My favorite family cooking traditions
I love the holidays with my family. My family is known for piling all the women big and small into our tiny kitchen and everyone gets to toss in their own ideas on how to cook the beast. This year I get to be the host for the first time and I'm really excited to try some recipes I've found here! The one thing I miss the most about living away from my family is the creamed chicken over toast my mom used to make for me when I was sick or having a bad day. It took 2 days to get everything finished but it was so good and we always had TONS of leftovers to enjoy.
My cooking triumphs
It's an uphill battle in my kitchen. If something isn't good the first time I'm not afraid to try again and do things my way. I stare at my cabinets for hours piecing together ingredients to create a recipe. I love desserts and snack foods. My most triumphant finish was my creation of chewy bars from some left over cereal, peanut butter, and some chocolate chips. I couldn't believe how easy it was and how great it came out. Even my husband who hates sweets loved it!
My cooking tragedies
Crepes. My mortal enemy. For some reason I love the crepes they make at the crepery on Thayer in Providence but I can never get my home made versions to come out even remotely good tasting. They are always rubbery and taste like paste. I wish I knew more about the process to fully understand what I'm doing wrong!

World's Best Lasagna
I followed this recipe exactly and found it was sincerely the most amazing lasagna I have ever had. I hate ricotta cheese and loved that ricotta was barely noticeable in the lasagna. Secondly, I used spicy italian sausage as my husband and I prefer spicy and the lasagna had the most unbelievable flavors. I had leftover meat sauce and used it the next day over pasta, it was amazing! This is easily a 5 star recipe.

Pie Crust IV
I use this recipe for chicken pot pie. This pie crust is delicious with a few alterations. I use butter because I find it gives the crust more flavor otherwise it's pretty bland. I also mix in some Italian seasonings.

Blender Hollandaise Sauce
I'm not normally a fan of hollandaise but this was truly delicious. I made it to go with eggs Benedict and cleaned my plate! I didn't use lemon juice cause I really don't like it and since I didn't have dijon mustard I tried spicy brown mustard instead and the flavor was perfect. I'll make this for my husband for valentines breakfast!
