Dijon Chicken Salad

UN-BELIEVE-ABLE. Halve the honey and throw in whatever you have at home ... dried cranberries, celery, and toasted pecans worked woooonderfully. I made 1/2 the original recipe first, had it on whole wheat toast for lunch for 4 days, then when I ran out , I made 3 times (yes, 3 times) the recipe! Must I say any more?

Actually Delicious Turkey Burgers

Very versatile recipe. I made 1/3 of the recipe using 1 whole egg and about 1/4 cup breadcrumbs. Couple of dashes of Worcestershire sauce, some dry 'onion soup' mix, lots of fresh garlic and parsley ... We had ourselves a wonder dinner, one that we'll have quite often in this house!

Middle Eastern Rice with Black Beans and Chickpeas

This recipe was fantastic, and oh-so-easy! I doubled the spices, and used half with the rice, and the other half while browning the turkey. I used veg stock, but I'll try chicken stock next time and also use strips of chicken breasts rather than turkey (though the turkey was delicious). We served thickened plain yogurt (strained yogurt through cheesecloth for a day) ontop. It made enough to feed an army, but it's versatile enough that we can change the leftovers into burrito fillings, etc.

Sweet Potato and Apple Casserole

I halved the recipe for my husband and I and used 2 small sweet potatoes and 1 Granny Smith Apple, but I kept the topping the same (that's my favorite part!). It was soooo good! This is how I will make sweet potatoes from now on (I'll have to lay off on the topping, though .. ..!)

Blueberry Zucchini Bread

These were WONDERFUL! I "healthified" them as usual, with the following modifications: used 1 1/3 all purp flour, 1 c whole wheat flour, 1/3 cup buckwheat flour, and 1/3 ground oats (oat flour). I also added 1/4 cup ground flaxseed AND 1/4 cup oat bran. I used the juice AND rind of 1 lemon (my modifications made the dough thicker and stickier, so I needed additional liquid). I love lemon and blueberries together! Even with all of these changes, the texture and taste were out of this world .. even my husband, who doesn't care for baked sweets, ate 4 of them soon after they came out of the oven!!

Chicken And Apple Curry

Once I added the curry to the sauteed apples and onions, I knew this was going to be good -- the smell was divine! I sauteed and combined everything in a cast iron pan, then simply added the cubed chicken breasts to the pan and put it right in the oven. This will be a recipe I know I'll enjoy 'playing around with.'

Crispy Butter Cookies

I am not a fan (AT ALL) of plain cookies (sugar or butter), but these were out of this world. I only tried a bite before serving them to be sure they tasted like something other people would enjoy, and before I knew it, I had eaten 3!! It's slightly crispy outside and soft, (like, melt-in-your mouth soft!) inside. The dough is indeed sticky so I did refrigerate it for about 30 minutes. The baking time stated was just right for me.

Orange Cake

I used freshly squeezed orange juice and the zest of about 1/2 an orange, yellow cake mix, orange cream flavoring (rather than lemon extract), and lemon pudding, yet the orange flavor in the cake was still very faint. Then, I made the 'glaze,' which totally ruined it because it tastes like a greasy topping. I plan on scraping the 'glaze' off and trying to replace it with the orange glaze used in the 'Poppy Seed Bread with Glaze' recipe. I'd have liked this recipe a bit if I hadn't of made 'Key Lime Cake II' the same day .. that cake put this one to shame!

Blueberry Flax Pancakes

I, too, used Bob's Red Mill 10 grain pancake mix, and followed the entire recipe exact, doubling it so that we'd have leftovers. The mix quickly got very thick, and was almost impossible to flatten out. I increased the milk a bit but still had a bit of a time with the consistency of the batter, but nevertheless, they turned out delicious. I may try whipping the egg whites and making waffles out of them next!

Zippy Summer Shrimp

Simple and delicious recipe. I followed as directed, with the following exceptions: I used lots of fresh garlic, half the pepper flakes called for (gave it a nice kick, but we didn't have to chase it down with water), and no basil (being that I had none). I also used lime instead of lemon juice. The only thing I'll change next time is cutting back on the oil .. it was quite greasy with that much oil. Sauteeing the garlic in a few TBS of oil and adding chicken broth would probably work well.

Spinach Pasta Salad

This recipe was wooonderful! I made 24 servings and left a little bowl for my husband. The salad went quicker than anything else and my husband asked me to make it again after he inhaled his bowl! This is an excellent way to get some serious nutrients into your diet!

Jalapeno Poppers I

These were wonderful! I used crushed Cheeze-Its (garlic and parmesan flavor) to bread and, because many reviews said these lacked heat, I left a few seeds in each ... needless to say, I had everyone at the party crying for a glass of milk! Next time I'll leave the seeds out, but follow everything else.

Mom's Favorite Baked Mac and Cheese

This was deeelicious!! I did happen to get MUCH more cheese than noodles, but I just addded more noodles so it wasn't TOO cheesy. May not be healthy, but it's a wonderful way to splurge!

Traditional Mashed Potatoes

With so few ingredients, I thought for sure these were going to be rather bland, but boy was I in for a surprise! These are wooonderful alone, with gravy, or any other way you can think of having them! Try them and you will NOT regret it!

Health Nut Blueberry Muffins

These muffins will definetly be a staple in my home!! I subbed applesauce for the oil and cut the sugar a tad, and they were delicious! With the 2 main unhealthy ingredients made healthier, these muffins offer a very nutritious beginning to your day!!

Best Ever Banana Bread

I made these into muffins for the family that I nanny for. The mom had 4 within 30 minutes of bring them over!! I kept one for myself to try, which I have say was veeery delicious! I followed the recipe exact, except I used only 1 1/4 cups packed brown sugar.

Sarah's Applesauce

I've already disliked store bought applesauce, even as a child, but I 'went out on a limb' and tried this recipe and ... wow! I'm officialy a 'sarah's applesauce' addict! I try using a mixture of apples and begin with half the sugar called for and add to taste.
