Super Duper Bean Salad
This was the first time I ever made a bean salad and it is so easy, quick and delicious. I used what I had in the house so I substituted a purple bell pepper for the green pepper and only used cans of garbanzo and kidney beans and used fresh yellow bean from the farmers market. I also used a greek salad herb mix in place of rosemary. Finally I used a small amount of red wine vingear in addition to the distilled white wine.

Dennie's Fresh Lobster Salad
So simple and quick. Per other people reviews I added some fresh lemon juice to the recipe. I decided to substitute Miracle Whip instead of mayo since it is sweeter and I thought it would lend itself to the natural sweetness of the lobster meat. I also added a little pinch of Old Bay seasoning in addition to the pepper. Im still in awe over how easy it was to make a really delicious meal (I ate the Lobster salad on a croissant with some lettuce).

Tofu Creamed Spinach
I just made this for dinner and cannot believe how flavorful it was. I made it vegan by using soy milk, using double the olive oil instead of butter and substituting nutritional yeast instead of the cheese. It wasn't incredibly appetizing to look at (especially the mix in the blender) but don't let the appearance fool you. I am lactose intolerant and this is a perfect alternative to the traditional creamed spinach.
