Vegan Black Bean Soup
If you use homemade stock (I used vegie), dry beans, fresh/frozen corn, and fresh tomatoes I think that this is very healthy and great for protein and fiber. I added zucchini, mushrooms, half a cup of barley to soak up some of the liquid, extra garlic and spices, and then chopped green onions on top for serving. It's really good, but I feel like I'm eating chili soup because of the flavour profile - this is not a bad thing, but I think next time I will nix the stock and just make black bean chili with this recipe. Still great though, so definitely 5 stars.
