Quinoa and Black Beans
I enjoyed the quinoa and black beans. It was a lot lighter than I expected, more of a salad than a main dish. I will be making it again, but probably not as a main dish.

Coconut Curry Tofu
This was delicious, although not as spicy as I would have liked. Next time I think I may marinate the tofu and add more chili paste.

Eggplant Parmesan I
I used fat free ricotta and a diet mozzarella. I sauteed the eggplant in a non stick skillet. I'm not sure how much that dropped the caloric content given how much cheese is in it, but it didn't affect the flavor at all. This was delicious!
