Ranch Dressing II
I wanted something with ingredients I could pronounce and that would taste really good. I am not really a ranch dressing person but my kids are, so I thought I would try this...I LOVE it!! So did the kids and hubby!! Incredibly easy to make too, with ingredients I already had around the house. The only thing I did differently was to use fresh chives because I didn't have dried ones. So good, I will make this over and over!!! Thanks for the recipe! 8D

Garlic Chicken Fried Chicken
This is the BEST fried chicken I have tried on this website!! I took other reviwers' suggestions...not using bread crumbs only flour with the spices, soaking the chicken with buttermilk for a few hours, coating the chicken right from the buttermilk soak (egg allergy), I fried the coated chicken in some peanut oil about 2 minutes each side (to brown up) and then placed it on a wire rack in the oven at 375 degrees for about 15 minutes or so (depending on how small I cut up the pieces). The chicken was incredibly tender inside but crunchy outside...I will say, though, add more spices, while the chicken had flavor it could've used a bit more. Kids and husband LOVE it and I will be using this one again and again!! Thank you very much for sharing!!!! 8D

Mini Cheesecakes
These are so easy!!! They were very good too! Hubby had a bring snacks to work day and I decided on these for a summery type of snack...a big hit!! The first thing to go! Since this was the first time for me to make a cheesecake I was unsure of what they look like done but I followed another reviewer and waited til they became cracked on top a little. They turned out perfect! While the vanilla wafers are easier I think they would taste better with crushed graham crackers mixed with butter and fresh fruit instead of the pie topping. Either way they were still delicious! Thanks for the recipe!!
