Vegetarian Kale Soup

This is sooo delicious and healthy!! I used a little more kale. I think this recipe would be even better with chickpeas instead of white beans.

Black Magic Cake

I really liked this cake. It was fluffy and light. I used a little bit of canned pumpkin for some of the oil (maybe 1/4 cup of pumpkin and 1/4 cup of oil) and it turned out great. I think I would use dark chocolate powder to bump up the chocolate flavor and add walnuts. I didn't frost it as it was sweet enough to stand on its own.

I liked this recipe, but I thought it was a little too sweet. Next time, I'll add celery and zucchini to the carrots to downplay their sweet flavor.

Zucchini Cornbread Casserole

This recipe is incredibly bland. I would say it needs twice the amount of salt and some pepper. I would also suggest sauteing the onions with garlic before adding it to the casserole.

Cream of Cauliflower Soup II

it tasted good, but it kind of looked like baby food. next time i won't even puree it and just keep it as chunky potato/veggie soup. Cauliflower was expensive when I went to the store, so I used broccoli instead. Added some parm cheese on the top. Also- this made WAY more than 6 servings.

Pizza Dough I

I subbed half whole wheat flour for the all purpose. I also proofed the yeast. I rolled the dough out thin and it was perfectly crunchy and chewy.

T's Sweet Potato Fries

These did turn out pretty mushy-but I'll try them again without as much pre-cooking. I have to say though, I liked that the pre-cooking made it really quick. I didn't even need the oil cause the water from cooking allowed the spices to stick. I used garlic powder, paprika, italian seasoning, and kosher salt.

Creamy Italian White Bean Soup

This was okay as directed, but it was too thick and too bland. I ended up adding 3 cups of chicken broth so that it was more like a soup and less like a thick stew.

Big Soft Ginger Cookies

These were amazing. I made a batch, but since I figured two people couldn't eat all these cookies at once, I froze them. They froze well, but they were gone in two days. My fiance actually likes them better frozen.

Cinnamon Bread I

This was amazing. It tasted like a lower fat version of cinnamon rolls. I didn't have any buttermilk, so I used water and it came out just fine. I made this into muffins for a quick snack/breakfast.

Amazingly Easy Irish Soda Bread

This was very easy and tasty. It didn't take too long to make and the crust was perfectly crunchy. The flavor was slightly sweet-which was good considering the baking soda can be a bit overpowering. I didn't use raisins and I'm glad I didn't. It was perfect as-is.

Whole Wheat English Muffins

These tasted great, but didn't have a great look to them or a nice rise either. Next time, I'm not really sure I'll follow through with the second rise, cause I notice that the one side forms a kind of crust and it doesn't look very nice. I also made them with 2 cups all purpose and 2 cups whole wheat.

Zulandt's Lentil Casserole

I liked this recipe. I don't think it needed the cheese at all, but it added a little bit of saltiness. I also don't think it needed to really be baked at all- but maybe that's just me. Everything was wonderful and smushy before I put it in the oven, but it was a little bit dry after baking. Next time I'll just throw it all together in a casserole dish and call it a meal.

Oatmeal Pancakes II

These pancakes are the best! I used whole wheat flour instead of all purpose, but other than that I followed the recipe exactly, and got a batch of moist, fluffy, yummy pancakes! I've added cinnamon and bananas to the batter too, and it's been great!
