Scalloped Potatoes and Onions

This was absolutely delicious. I sliced my potatoes really really thin, so the 2 hours was a little long. Be sure to baby-sit a little for the last half hour or so since everyone will slice the potatoes differently.

Corn, Sweet Onion, and Tomato Salad

This is very easy and very tasty. Make sure to cut the cilantro small. I tried to be laty with it and left some pretty big chunks, and that didn't work out so well. Over all, though, the salad tasted excellent!

Rotisserie Chicken

This recipe was so easy, my husband (who doesn't cook) was able to make this almost entirely by himself. He thought that salt, pepper, paprika and butter sounded too dram though, so he used lemon pepper, oregano and garlic too! This recipe is great as a blank canvas and you can add whatever flavors you like.

General Tsao's Chicken

My husband really likes this recipe. The only caveat that he has is that it is not General Tsao's. Its delicious Chinese-style spicy chicken, but is not quite the same thing as restaurant General Tsao's. This will become a regular part of our home meals. I was also impressed with how easy it was to make!

Double Tomato Bruschetta

YUM! Toasted the bread with the cheese separately. YUM! My boys keep asking me to make this again and again, but I don't mind. Its so easy and I love it.

Microwave Popcorn

This takes some practice, but the popcorn is way better than anything you can buy in the store. The only downside I have found is the thin layer of oil that has accumulated inside of my microwave after making this 5 times in one week. That's a bit icky, but its oh so tasty.

Dark Chocolate Cake I

For my sister-in-law's birthday, I made this exactly as directed. Used a chocolate custard filling and chocolate butter cream frosting. My husband and I hate cake. He has asked me to make him this cake for Easter, because it was so delicious!

Chewy Chocolate Cookies

So many of the reviews warn that these cookies come out too flat. I used some baking powder and that completely eliminated that problem. They're fluffy and tasty. I also added some white chocolate chips and they were just sinful. The only problems that I ran into were these: I made a double batch to take camping and that was a completely obscene amount of cookies, also, they did not travel well. They tended to crumble easily.

Morning Glory Muffins I

So tasty! I used Applesauce instead of Apple butter, and that made them just a hair too sweet. Next time, I will use less sugar, and probably use brown sugar. I made a double batch of these, and they were eaten within a week. I have received much praise for this one!
