One Bowl Chocolate Cake III

this cake was absolutely delish and equally important, it was easy! i followed the recipe exactly as stated, baked it for 32 minutes in a 9x13 pan and topped it off with a vanilla glaze (recipe from this site) within 20 minutes the cake disappeared!!

Delicious Ham and Potato Soup

totally delish! used low sodium chicken broth instead of water and didn't use chicken bouillon because I didn't have any but I think the broth made up for it..it's in the recipe box!!

these were good! I sprinkled on cinnamon sugar as soon as I removed them from the oil and then drizzled on some chocolate sundae topping for an extra special treat!

Homemade Vanilla Extract

Ok, it's been almost three months and I started to use my homemade vanilla this past week. I love it! It has a smooth rich taste that's much better than store bought. I split the beans lengthwise and used the least expensive vodka I could find. I currently have 2, one quart bottles and one gallon bottle "marinating". Because my taste always calls for more flavoring and spices in my recipes, I used about 12 beans for each quart and twice that much for the gallon bottle. What I'm using now is what was poured off before adding beans to the bottles and for that amount I used about 5 beans split lengthwise and cut in half. I still have plenty of beans left so I'm going to experiment with a bottle of bourbon and I will try a "better" vodka to see if there is truly a difference but, I am very satisfied with what I have thus far and I do a lot of baking. BTW, I am going to use the gallon bottle to make 2oz. bottles of vanilla to use as Christmas gifts for my family and friends who bake. Thanks so much for sharing this recipe. I will never have to buy store bought vanilla extract again. Homemade is sooooooo much better and over a period of time, cheaper!

Apple Pie I

this was great! I used the french pastry pie crust recipe on this site and used this recipe for my first ever from scratch pie!! it was delish!! on my side next time I'll add more cinnamon and maybe some allspice to suit my tastes but for my first time out, I'm getting an arm cramp patting myself on the back in between eating and sharing the pie!! woohoo!!

French Pastry Pie Crust

OMG! this was my very first try at making a "from scratch" pie crust, usually I buy frozen pie shells. I will never do that again! this was so easy and so buttery and good (I used only butter because that's what I had)...because this was my first try there were some things on my side that I could have done better... I didn't roll it out enough so the bottom crust was kinda thick (the top crust was fine) and although for me it was good i know that won't appeal to everybody so next time i'll roll it out thinner, but overall this was a great recipe and will now be my go to pie crust recipe because it was soooo easy...btw, i made the crust the night before, wrapped in plastic wrap and left in the fridge...in the morning i let it sit for a few minutes before working with it and the prior suggestions about using plastic wrap vs. flour for rolling it out made it that much easier!! woohoo!!

Quick and Easy Yorkshire Pudding

loved it! I've heard of Yorkshire pudding before but never really knew quite what it was. This recipe is so easy and I can envision so many uses for it. Two (or so) of these in the bottom of a bowl of chili, or with any kind stew, etc. I've added a pinch of salt and a dollop of maple syrup to each muffin tin and they were delicious with breakfast! this is a good, easy and versatile recipe...thanks for sharing!!

Zucchini Pineapple Bread

This was great! What I love about these quick bread recipes is that you can tweak them to suit your tastes. Because I like spice I always add more vanilla, cinnamon, and then nutmeg, allspice, etc. and it still tastes great. Also in this recipe I grated more zucchini that what was called for and I used it all (about 3 cups) and the pineapple gives it extra moistness. Family and friends loved it!!

Kalamata Olive Tapenade

Loved it! I am a big olive tapenade fan...when the local warehouse store ran out I decided to make my own...I followed this recipe but used pimento stuffed manzanilla and black olives because that's what I had on hand...I love the color from this combination and I also added a couple of anchovies...this turned out just as good or maybe even better than the store bought brand and because I made it from scratch I was able to control the amount of oil used because I think the store bought band is way too oily!! great recipe thanks for sharing and because this turned out so well I will not be buying tapenade again since this was soooooo easy to make from scratch!!

Lemon Square Bars

I totally agree with the review that said don't change a thing! sometimes you read reviews and think you'll have to make changes or you get turned off from trying the recipe because of all the suggested changes. There's nothing wrong with rearranging to suit one's taste but at least be fair and try or rate the recipe as shared. I followed this recipe to the letter and it was great. This was my first attempt at lemon bars and everyone I shared with loved them and asked me to make them again! I have a friend that has to be the pickiest person on the planet and she loved them!! thanks RCOMP for sharing this great recipe!

Oatmeal Raisin Cookies I

This was the first time I made cookies from scratch and this recipe was excellent. I think what I liked the most is that you can tweak it to your taste. I followed the advice of a few others and soaked the raisins and used 1 1/2c. of flour. Next time I will use more spices (nutmeg, more cinnamon, ground cloves). I cut back on the sugar as some suggested and used only brown sugar but next time I will add the sugar as the recipe calls for and I added walnuts. I don't understand how this could have possibly been runny as others have stated. When mixed, I got a good hearty dough and the cookies baked just like I like them with crispy edges and a nice chewy texture. Thanks so much for sharing this recipe it will definitely be a go to recipe for me!!

Quinoa and Black Beans

Love, love, love it! I added more cumin and other spices to suit my taste, I omitted the corn because I didn't have any and I didn't have fresh cilantro so I used dried. This is definitely a keeper. I can imagine several variations like adding soy sausage, red/yellow bell peppers, other beans, etc. and I will definitely use fresh cilantro next time. Thanks for sharing!

Eggnog French Toast

Excellent! I made my own egg nog because I do not like all the artificial stuff found in store bought egg nog. I made this eggnog french toast for a special holiday breakfast for friends and it was a big hit!!! Thanks for the idea!

Country Apple Dumplings

these were a big hit at work! I only used one cup of sugar and I made it half and half with brown and white sugar and I added nutmeg, vanilla and ginger to the melted butter and sugar. I was hesistant about the Mountain Dew but they were delicious. Will defintely add this one to the recipe box! Thanks for sharing. The biggest bonus was how easy they were to prepare. I'm going to experiment with different fillings, maybe ricotta cheese or canned pie filling...the possibilities seem endless!!

Spinach Enchiladas Verde

I loved this recipe! It was soooo easy yet very tasty! Like others, I layered vs. rolled the tortillas and it was great. I used a spicy salsa verde and added some black beans. This is definitely a keeper and I will be making this often!

Spanish Rice II

This was delicious and most importantly, easy. I substituted brown rice and cooked the rice according to brown rice instructions. I'm watching my sodium so I didn't add the salt but the can of diced tomatoes and chili had more than enough sodium so I didn't miss the added salt. I added cumin, cilantro and doubled the chili. This is definitely a keeper!! Thanks much!!
