Country Apple Dumplings

these were a big hit at work! I only used one cup of sugar and I made it half and half with brown and white sugar and I added nutmeg, vanilla and ginger to the melted butter and sugar. I was hesistant about the Mountain Dew but they were delicious. Will defintely add this one to the recipe box! Thanks for sharing. The biggest bonus was how easy they were to prepare. I'm going to experiment with different fillings, maybe ricotta cheese or canned pie filling...the possibilities seem endless!!

Spinach Enchiladas Verde

I loved this recipe! It was soooo easy yet very tasty! Like others, I layered vs. rolled the tortillas and it was great. I used a spicy salsa verde and added some black beans. This is definitely a keeper and I will be making this often!

Spanish Rice II

This was delicious and most importantly, easy. I substituted brown rice and cooked the rice according to brown rice instructions. I'm watching my sodium so I didn't add the salt but the can of diced tomatoes and chili had more than enough sodium so I didn't miss the added salt. I added cumin, cilantro and doubled the chili. This is definitely a keeper!! Thanks much!!

Tofu 'Fish' Fillet Sandwiches

I gave this recipe a 5 star rating after I made one change. I couldn't find kelp powder only kelp granules which I now use as a very good salt alternative. The first batch with the kelp granules was ok but didn't taste much like fish to me (likely because of the granules vs. the powder) although the texture was good and the taste was ok. For my second batch I crumpled up, almost to powder form, 2 sheets of nori (seaweed sheets used for making sushi) and they were much, much better. I put the crumpled/powdered nori sheets in the same bowl with the olive oil. After swirling it around in the oil and nori mixture, I then put it through the breadcrumb mixture. I baked mine to save some fat and calories and they came out just great! A couple of my coworkers tried some of what I brought for lunch and they loved it. After the addition of the nori for more "fish" flavor, this recipe is definitely a keeper and has become a part of my regular menu! Extra firm tofu works best and you must be sure to drain the tofu before handling. I followed the advice of a tofu chef I saw online who recommended to place the brick of tofu on a plate lined with paper towels and place a cutting board with two canned goods on top of the tofu to press out the extra water. I did this for 15 minutes and the tofu was perfect. But you can only do this with firm or extra firm tofu, otherwise you'll squish it flat! ENJOY!!

Favorite Old Fashioned Gingerbread

This was delicious! I doubled up on the spices as others suggested and it came out great. The first time I made it, it came out sort of dry because one hour in my oven was too long. The next time I made it I used hot carnation milk instead of hot water and I let it bake for only 40 minutes. It was melt in your mouth good. I sent it to my relatives on the east coast and they loved it. This is definitely a keeper!

Coconut Ambrosia Salad

I could not believe how easy and tasty this was. I added diced apples because I like "crunch" and I omitted the milk because I thought that would make it too "runny". It was so good, I will definitely be making this again!

Grandma's Corn Bread Dressing

For the first time in my life I made cornbread dressing and I used this recipe. It was great. Everyone loved it. I adjusted the seasonings for my taste and it turned out great. I added the meat from boiled turkey necks and that sent it over the top!! thanks for a great recipe.

Slow Cooker Barbecue Beans

This is a great recipe. All my guests loved them. But because I'm concerned about sodium, I think the next time I make these, I'll go the extra step and use a mixture of dry beans. If I soak the beans overnight it should not take too long to cook. I also used soy meat crumbles and my guests couldn't tell the difference. I added some brown sugar to add some pizzazz. Thanks for the great recipe, I will definitely be using this recipe again and again!

All-Day Apple Butter

OMGoodness! this was absolutely delicious and sooooo easy to make. I've made two batches so far. The first batch I used red delicous apples and it turned out yummy! for the second batch I used braeburn apples and it turned out too tart for my taste so I would recommend using a "sweeter" apple to start with and you won't go wrong. BTW because the apples were sweet I used only 1 1/2 cups of brown sugar and it turned out perfect! thanks so much for this recipe, it has definitely been added to my arsenal!!

Mom's Turkey Sausage Patties

At the advice of others I doubled the recipe. I added the crumbled turkey sausage to bar-b-que beans for my church picnic. Everyone loved them! I will no longer buy turkey sausage but instead I will make my own! Thanks!!

Homemade Italian Turkey Sausage

I followed the advice of others and doubled the spices. Since I was using 2 1/2 lbs. of ground turkey I doubled the amounts and added a little bit more. I added the crumbled ground turkey sausage to some bar-b-que beans for our church picnic - the beans were the hit of picnic, everybody loved them. I will no longer buy turkey sausage, instead I will make my own - thanks!!
