I will never stray from this recipe! I only let them marinate for maybe 3 hrs, I am really looking foward to doing it over night as the recipe calls for. I notice alot of reviers skipping the onion in the cavity... put something in there! I think an aromatic would work fine, but the onion releases moisture into the breasts along with the flavor. I think my white meat was juicier than the dark! I put the chickens on top of whit potatos and carrots that I seasond liberally with minced onions, garlic, and s&P. Fantastic all in one, set it and forget recipe. I cannot wait to try out a chicken salad with the leftovers.
