Best Brownies

Oh. My. Goodness. These were the best thing I could have made for my chocolate craving. I used dark cocoa powder and forwent the frosting, baked it in a round cake pan for 23 minutes and it came out PERFECTLY! None of that artificial sweetness like you get from a box mix. A moist brownie with just enough crunch on the top to add a really delightful texture contrast. I added it to my recipe book right away. Thank you!

Asian Lettuce Wraps

These were amazing! I didn't have any hoisin sauce or chili sauce so I diced some red and yellow pepper and red pepper flakes. I subbed ground chicken for ground beef and eyeballed the other measurements, but this was so good that I can't wait to make it again and enjoy the leftovers with tortillas. Thank you!

Whole Wheat Pita Bread

This was very good. I took all the suggestions about not adding salt directly to the yeast and did 2 cups whole wheat and 1 cup all purpose flour. They were delicious and really simple. My biggest problem was being so impatient. I might add some canola oil next time to keep the dough more uniform because it flaked a little.

Chicken and Dumplings III

I added some garlic powder, a little black pepper, fresh oregano and rosemary when I cooked the chicken and onions. I added extra milk and about 3/4 cup of water because the reviews said there wasn't enough sauce, but I ended up with a lot left. The most disappointing thing was how dense the dumplings were, though. I'm going to look for a new dumpling recipe, but the rest of the recipe was very nice.

Beignets

This was a very good recipe. My dough turned out very sticky and I couldn't roll it out, so I pinched off pieces somewhere between teaspoon and tablespoon sized. The oil worked better for me between 320 and 340 degrees F. Next time I will add another half cup of flour and a teaspoon or so of vanilla. Still, it was delicious and I had plenty to share.

Ratatouille

Delicious! Next time I will layer it and add more herbs to season it, then toss the layers and bake it. Great way to get your veggies, and couscous is a great addition. I loved it with herb roasted chicken.

Chicken Tequila Fettuccini

This recipe was a disaster! The sauce was too spicy and got lumpy. I couldn't get things to mix well all at the end. The chicken was tough and overdone and I had way too many dishes to wash when I finished.

Tuscan Soup

Really good soup. I am going to add fresh garlic when I cook the onion and use lower fat turkey sausage next time. It was a great way to use the spinach I had. I used half the recommended amount of chicken broth and substituted water for the rest.

Mrs. Sigg's Snickerdoodles

Made a batch of these for a small get-together with about a dozen guys. Maybe I made the cookies too small, but they made 5 dozen, not 4. That being said, at the end of the day there were only 8 or so left. I personally liked them, but thought they were a little acrid, as mentioned, so I'll swap the amounts of baking soda and cream of tartar next time. Also, I used about 4 times the amount of recommended cinnamon sugar coating. Just my personal preference.

Scallops with White Wine Sauce II

This got rave reviews from my boyfriend. I made it as part of a meal for his birthday this weekend, and since I was only cooking for two I halved the amount of scallops - same as doubling the sauce. I thought the sauce was a bit tart, so I'll use less garlic and a bit more green onion next time (my substitution for shallots). I used a sauvignon blanc because it was on hand. Will also not totally double the sauce since there was so much left. I had no problem sauteeing the scallops in sauce instead of baking. I served it over linguini with parsley flakes and pepper. Quite delicious, and we're both looking forward to the next time I make it.

Mandarin Almond Salad

This recipe was wonderful! I sliced up some baby carrots and added them for color and because I like the flavor. I was worried about the onions, but couldn't taste them more than any of the other flavors. Next time I'll tear the mandarin oranges in half and make less dressing. I don't like as much dressing as the recipe made, but adding more lettuce wasn't a problem. My boyfriend doesn't like vegetables but he really enjoyed this salad, so I'm keeping it. Thanks!

Meatball Sandwich

I have made these meatballs a number of times now just for the meatballs and excluded the sandwich part. I cut down on the amount of parmesan cheese because my boyfriend is lactose intolerant and they still taste great! I would encourage people to play with the seasonings too, adding things you like or just whatever you have in your cupboard. These are simple and fantastic.

Cream Cheese Frosting II

This is truly a wonderful cream cheese frosting. It's simple and creamy with a real cream cheese taste. I have made it twice, once with regular and once with reduced fat cream cheese. The reduced fat changes the consistency only slightly, but not enough to make a big difference unless you're tasting it straight out of the bowl. Food coloring is a fun addition, too!

Best Lemonade Ever

This really is worth the extra work to make the syrup base. I also used only 1 1/4 C sugar and it created what was in my mind the perfect balance of sweet and tart with beginning and aftertastes. The tip to soak the lemons in warm water and roll them firmly before slicing and juicing does a great job maximizing the juice you can get from one lemon. This will be a big hit this summer!

Hearty Jambalaya

I made this recipe, taking some of the suggestions into account. I didn't include any tomato paste because I didn't have any, which eliminated any need to add chicken broth and it still kept a red color without being overpowering. I would strongly suggest keeping the shrimp in the recipe, because it took on an amazing smell once I added them, plus the additional texture is a lot of fun in the mix. I used frozen peppers instead of fresh, and didn't have any problem with them, and also had to substitute chili poweder for the cayanne pepper. The rice I made with chicken broth for a nice flavor. Both my boyfriend and I really enjoyed it and I am excited to make it again.

Curried Peanut Chicken

I added some steamed vegetables to the marinade - zucchini, broccoli, green beans, carrots, and potatoes. The marinade was way too sweet for me.

Zucchini Bread II

I only made one loaf and made cupcakes of the rest of the batter. The cupcakes only needed 35 minutes to bake. Next time I'm going to grate the zucchini a little finer and add nuts, which I didn't have on hand this time. Still, quite delicious!
