Thai Peanut Dressing

This was so yummy! We had leftover Thai restaurant food, but not enough for the whole family, so I whipped up some of this dressing and some rice, threw a little leftover grilled chicken in, and YUM! Will do this instead of taking the fam out for Thai next time I have a hankering.

Chicken Breasts with Lime Sauce

Very, very nice for our family, and not too time-consuming. I didn't feel like pounding the chicken, so I just popped it into the oven at 400F for about 20 min. after the saute.

Black-Eyed Pea Gumbo

Yummy! I made it as written, with Zatarrain's and Frank's Red Hot on the side. It fit a wide variety of spice preferences that way. It was much more satisfying than other soups I've eaten recently. I also froze and ate it later. The rice was a bit gooier, but still yummy.

Red Kidney Beans (Rajma)

Yummy, yummy mix of spices. I didn't have the whole spices except the peppercorns, and I just added the ground spices. My kids liked it, too. I served it with plain rice and yogurt to help cut the spiciness for our more sensitive palettes. A wonderfully different way to eat beans, which we are always trying to add to our diet.

French Beef Stew

Good! I found a recipe for a dijon mustard substitute online. It didn't overpower the soup, but gave it a nice little "thang". Dijon Mustard 1 tablespoon dry mustard 1 teaspoon water 1 teaspoon white wine vinegar -- (or 1/2 white wine, 1/2 white vinegar 1 tablespoon mayonnaise pinch sugar Mix all ingredients. Yield - 2 Tbsp.

This was good and everyone liked it. It was a refreshing change from the usual Thanksgiving fare. If you're going to double the recipe, you'll also need to lengthen the time to bake it. We ended up microwaving part of it, and it turned out just fine.

Wild Rice Stuffing for Turkey

Nice texture with the wild rice. I needed to cook the rice longer than was listed. I made homemade croutons, then decided to double it, so I made up the difference with plain ole dry bread chunks. I used a mixture of homemade broth (frozen from last year) and boullion. There was a tremendous amount of butter, and it was a bit oily, so next time I'll cut that in half.

Cha Cha's White Chicken Chili
