Spinach Enchiladas
A great base for veggie enchiladas. I added mushrooms & artichoke hearts to the filling, as well as some salt & pepper. Then I topped with green enchilada sauce mixed with a little sour cream (in lieu of the regular enchilada sauce).

Chicken Valdostano
Really great. Made it for friends who were very impressed with the flavor. Served with sauteed zucchini & brown rice.

Simple Hamburger Stroganoff
I love this dish. I add some chopped onion & minced garlic to the meat as it cooks & then when the meat is almost done, I put in fresh mushrooms. I only use 1 can of soup & about half the cream cheese & sour cream. Perfect!
