My favorite family cooking traditions
Being a vegetarian, I had to leave behind most of my Chinese cooking traditions. However, I still love the large variety of dishes in every Chinese meal.

Eggplant Croquettes
Yum! I used 1 cup of onions and also added a diced red pepper. Used more bread crumbs than called for, and found only one egg was necessary. I followed other reviewers' suggestions and baked them in the oven. Delicious!

Baingan Bharta (Eggplant Curry)
I could taste the potential in this dish, but alas, it was waaaaaaay too spicy! 1 whole jalapeno pepper was way too much for me, in spite of the many years I have spent acclimatizing to spicy cooking. Next time I will use only 1/4 of a jalapeno.

Freezer Caramel Drizzle Pie
Scrumptious! When first glanced at recipe, I thought "caramel ice cream topping" referred to caramel ice cream for use as a topping. Thus, purchased ice cream and no caramel topping. Instead, used Dulce De Leche, which was lying around the house, and the results were fantastic! Since Dulce De Leche is thicker than caramel sauce, it did not drizzle evenly on each layer. Instead, we achieved a marble swirling effect, which was simply delicious! I wish I could give this recipe more than five stars!!
