Golden Oatmeal Bread

  • 1 cup all-purpose flour
  • 3/4 cup quick cooking oats
  • 1/2 cup whole wheat flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 3/4 tsp baking soda
  • 1/2 tsp cinnamon
  • 3/4 cup unsweetened applesauce
  • 1 egg
  • 1 1/2 tsp vanilla
  • 1/3 cup golden raisins
  • 1/3 cup chopped pecans

Directions

  1. Combine flour, oats, ww flour, sugar, baking powder, baking soda and cinnamon
  2. Add applesauce, egg, and vanilla and stir until moistened
  3. Fold in raisins and pecans.
  4. Bake in 8x4 loaf pan at 325 degrees for 50-55 min or until a toothpick inserted at the center comes out clean.
  5. Cool in pan for 10 min before removing to wire rack
Made the Golden Oatmeal Bread for the quilting club today and it was good.  Still I think the recipe needs some tinkering.  I do so wish the pictures could be attached to private recipes.  I'm very visual and I like seeing the results of the recipes.  Seeing a pretty result makes me more likely to try the recipe.  It's a bother to put the recipe both places, but guess that's the only solution for now.  Maybe they will "fix" that before long.

Donna is your bread sweet? Sounds divine I know my MIL would love it!!! I might make it for her to gain some extra brownie points!!

It's just slightly sweet. More like a breakfast bread than a sweet bread. I'd like to try Splenda in it next time and see how that works. It would cut down on the calories.

Looks great Donna. Sometimes it is better to use the real thing rather than Splenda as Splenda is toxic to the body, there is no free ticket with sweetners. You can do a search on Splenda for dangers or truths. (Sorry, I didn't mean to get into it, but I am passionate about sharinf my knowledge with others in hopes of helping :) )

I understand your concer SweetCreations, but when you are dealing with diabetes, sometimes the substitutes are less toxic for you than sugar. Guess it's a trade off that each person has to decide on for themselves.
