Cream Cheese Frosting II

Worked Well for me. Used it to frost cupcakes and held up perfectly well. Not too sweet. I did, however, cut the powedered sugar to about 3 cups. Thanks!

Prime Rib

I used this recipe for two years in a row. The first year it turned out perfectly, and the second year I ended up with a raw prime rib and a lot of frustration. The difference... the first year I used an electric oven and the second year I used a gas oven. My gas oven didn't retain the heat the same way my electric oven did. If you have a gas oven, you may want to make sure this recipe will work for you. I've sadly had to find a new way to cook my prime rib, now that we have a gas oven. Just a word of caution!

Cajun Chicken Pasta

I tried this last night and absolutely loved it! It really does taste like something you'd get at an Italian restaraunt. My only complaint was the small serving size... I needed enough to feed a group of 12 and I'm always a bit wary of the measurements I get when I adjust the serving size, but this still turned out wonderfully. I didn't have cream and was out of milk so I ended up substituting half evaporated milk and half sour cream for the cream and got a perfectly creamy sauce. I think I may up the Cajun seasonings a bit next time because I would have liked a bit more spice, but it was perfect for the kids! And I think I may substitute different vegetables, too, with whatever I have on hand. But this recipe is great! A new favorite.

Broccoli Cheese Soup III

My family really liked this. I made it for a soup buffet and added some chopped carrots for more color. I also added more cheese. I figure everything's better with more cheese, right? I really liked it because I really wanted a soup that didn't use processed cheese... blech. This one was great. Perfect consistency and texture for us. Thanks!

Mom's Zucchini Bread

Good basic zucchini bread recipe. Stayed moist. We used mini chocolate chips in place of the walnuts and substituted about 1 cup whole wheat flour. My kids gobbled it right up. Thanks!

Beth's Peach-Nectarine Muffins

I loved these! I doubled the recipe and following the recommendations of other posters, used part brown sugar and added a tsp (or two) of pumpkin pie spice. These muffins were perfectly light, moist and just plain awesome!

Tacos De Matamoros

This was OK. I liked simmering the beef mixture all day, but felt like the spices weren't enough and ended up adding another Tablespoon of taco seasoning to give it enough flavor for my tastes. I did like the addition of the green peppers and onions.

'Something Different' Fruit Salad

I did not enjoy the salty flavor in this salad. I wanted to try something different and let it sit for awhile since another reviewer said it wouldn't be as salty if I let is sit for awhile. That wasn't the case. The next morning the salad was still too salty to eat, and I only used half of the salt the recipe dictated. I gave it two stars because I liked the honey/lime mixture and thought it was tasty before the salt ruined the flavor for me. I guess we just don't have daring enough tastebuds...;)

Churros II

These were fun to make and turned out OK. I didn't find it too stressful... like another reviewer, I placed my hot, fried churros in a plastic bag with the cinnamon/sugar mixture and just coated them by shaking the bag. The dough was a bit eggy for my tastes but my husband and boys all enjoyed the recipe.

Chocolate Peanut Butter Squares

Awesome! The peanutbutter filling tastes just like a Reese's, but better! I followed the other reviews and added more graham cracker crumbs (love the crunch that adds) and used 2 cups milk chocolate chips. These were awesome.
