Greek Chicken Pasta
Made it "vegetarian" ... added a head of diced broccoli with the veggies instead of chicken. Used tortellini for the pasta. I also used a can of diced tomatoes since that's what i had on hand. I drained the juice into the onions to reduce ... then went on as with the original. YUM

Banana Sour Cream Bread
it is quite sweet ... but the sour cream makes a fabulous balance. i sprinkled my pan with turbinado sugar (large crystals) ... added a beautiful crunch. i also doubled the cinnamon. oh ... and i used half sour cream, half natural yogurt to drop the calories ... rich without being too naughty

Easy Garlic-Lemon Scallops
great! made the following modifications ... half butter/half evoo. sauteed the garlic. added fresh lime (out of lemon) ... turned off heat and added scallops (had frozen bay in the freezer ... as long as you don't cook them too long, they stay nice and tender). when the scallops firmed up added all into cooked whole wheat fettuccine. it disappeared!!
